    Bourbon BBQ Sauce
    Ingredients:
    - 1 cup ketchup
    - 1/2 cup bourbon
    - 1/4 cup apple cider vinegar
    - 1/4 cup brown sugar
    - 3 tablespoons Worcestershire sauce
    - 2 tablespoons molasses
    - 1 tablespoon smoked paprika
    - 1 teaspoon garlic powder
    - 1 teaspoon onion powder
    - 1/2 teaspoon ground black pepper
    - 1/2 teaspoon salt
    - Optional: 1/2 teaspoon chili powder for extra heat
    Pulled Pork
    Ingredients:
    - 2.2 pounds 1 kilo pork collar/shoulder
    - 2 tablespoons brown sugar
    - 1 tablespoon smoked paprika
    - 1 teaspoon garlic powder
    - 1 teaspoon onion powder
    - 1 teaspoon salt
    - 1/2 teaspoon ground black pepper
    - 1 cup water or chicken broth
    - 1/2 cup Bourbon BBQ Sauce (plus extra for serving)
    coleslaw
    Ingredients:
    - 1/2 head of green cabbage, finely shredded
    - 1/4 head of red cabbage, finely shredded
    - 2 large carrots, peeled and grated
    - 1/2 small red onion, thinly sliced
    - 2 tablespoons fresh parsley, chopped
    - 3/4 cup mayonnaise
    - 2 tablespoons apple cider vinegar
    - 1 tablespoon Dijon mustard
    - 2 tablespoons sugar
    - 1/2 teaspoon salt
    - 1/4 teaspoon black pepper

    Cook for 50 mins pressure.
    To cook pulled pork in an oven. Preheat the oven to 300°F (150°C).
    The cooking time depends on the weight of the pork shoulder, but a general rule is about 1 to 1.5 hours per pound. For a typical 4-6 pound shoulder, this means 4 to 9 hours.
    Check for doneness by ensuring the internal temperature reaches at least 190°F (88°C). The meat should be very tender and easy to shred with forks.

    I lived in North Carolina for thirty years and barbecue pork is a BIG deal there. I have had the best and this looks like it will be right in there, and I am so happy that you put the coleslaw where it belongs because it tastes so good like that. I will go to the grocery store tomorrow and see if they have a piece of pork worthy of this recipe.

    Rik you outdid the Yanks on this one!
    I'm going to look for the biggest Kaiser buns I can get for this recipe, so I can make a one-serving, heavily loaded monster sandwich. What a show-stopper!
    Would go nicely served with a Pacifico Cerveza with a nice piece of lime por favor!

    In Texas we love pulled pork. I make it easier by throwing everything in a crock pot . I use a can of root beer. No mess no fuss. Love your Kohl Slaw too on there 😊

    I must admit...as a Texas man, it's hard for me to learn any sort of BBQ from a Yorkshire man. LOL. But gotta admit, this looks amazing and I'm going to try it. I'm not all that good with pulled pork. As I'm from Texas, my main focus has always been smoked brisket, and I'm pretty good at it.
    Thinking that a very slow smoked pork butt would also be wonderful in this recipe. I don't own an instant pot. However, that cole slaw and sauce look stellar!!!

    I was wondering when you were going to get to warmer weather comfort food. Pulled pork and slaw sandwiches fit the bill perfectly, and that bourbon barbecue sauce is, as the kids say, on point. Lots of people think a good barbecue sauce is beyond them but if they just watch and follow along, they can’t go wrong. Simpler ingredients are the best and have many more uses folks, so invest in that apple cider vinegar and molasses. They won’t sit on the shelf for long!

    Have you ever thought of doing an old English recipe called Brown Windsor Soup? A posh English bloke (not me) phoned up Anthony Worrall Thompson on his TV show asking how it was made.? Anthony panicked live on TV . It was quite comical to watch! He had absolutely no idea how it was made but wouldn’t admit it. I looked this soup up on Wikipedia. It was a favourite of Queen Victoria and was capitalised by tinned soup makers for the working classes, who made a right mess of it. When the new soups came about in the 1950s, (Campbells, Heinz, etc,) Brown Windsor simply disappeared! Any idea how this soup was originally made for Vicky?

    Now this I had growing up, only difference is that my mother would put melted Velveeta on top and slaw on the side or sometimes she did potato salad. Same concept though.

    We're mostly veg with intentional carnivore deviations and this is going to be one of them. This is similar to my recipe, only difference is I use apple juice and cider vinegar in the IP instead of water.
    I'm going to try your coleslaw, it looks wonderful. I usually do a Cracker Barrel copycat with a bit of sugar and Worcestershire sauce and celery seed. I love mustard so your recipe is on the menu for tonight. Thanks so much for sharing.

    Good one rik, might give this one a go the weekend, might put mine in a Baguette so i can devour it from end to end, i suppose you could have put the stick through the middle whilst eating it, it does look as succulant though.

    I would suggest trying a 2:1 ratio of onion powder to garlic powder, or even better, use granulated instead of powder.

      I have this but didn't wear it every day - the other one is cutting my finger off - I had pins and needles in my finger the other week. I never wore this due to the stone, which is a bit of turquoise, cheap me! Birth stone. Not much choice now unless I don't wear one, but after 20 years, it's a part of the hand.     I'm not sure if this is a Yankee concoction but I'm pretty sure we own it :) This is a great version if you don't have a pit. You can also braise it in a pot...takes awhile. That's a pretty good whippy up sauce. There's a thousand versions of cole slaw and they are all good :) You will find these on the menu of almost every sandwich shop in America, they are good and...this is a good version. Good job Rik :)

    Looks very tasty Rik you must have known I had picked up a yellow sticker pork shoulder and large baps yesterday got most of the other ingredients in the fridge and pantry so we will be having this when iv thawed the pork one day in the week thank you 👌Amanda xx

      Sounds great! I got 4 950g cartons of Australian Greek Yoghurt with vanilla bean for the price of one yesterday on reduced - I love it - in a bowl with passion fruit. The sour really goes well with the yoghurt. Thank you, Best, Rik

    Rik, I would love to watch you make your own mayonnaise as the vegetable oils, and additives in bought ones are probably not that healthy. Just egg and oil and seasoning would be perfect.

    Looks scrumtious. I'm licking the screen. I once tried the same bought from one of the 'big outlets' [I won't mention which] and it was disgusting! The pulled pork was too wet and steamy and not chunky [probably in the bain-marie too long]. It was not like BBQ'd pork that had been pulled. This in turn made the bread bun wet and soggy, and I can't stand soggy bread, Aweful! This video demonstrates how to do pulled pork properly even if you don't have an outdoor BBQ setup.
