In the U.S. i have found the best for me is "Zip Strip" remover for rust, paint, and varnish. after that Ultra sonic for deep rust removal. Awesome job

Nice job! For the other knife, I'd stick with wood to keep the traditional look, but see if I could find a beautiful bit of burr walnut which would look seriously nice.
I think that's looking better than it ever look I have the exact knife and it is very old it was Grandad not in bad condition but it is definitely no spring chicken

I use a 24hr soak in white vinegar works quite well

240 grit is a bit harsh for that knife, possibly 600 grit and finish with 1200.
