In the U.S. i have found the best for me is "Zip Strip" remover for rust, paint, and varnish. after that Ultra sonic for deep rust removal. Awesome job
Use noodles and super glue to replace the wood look it up works wonders!

240 grit is a bit harsh for that knife, possibly 600 grit and finish with 1200.
Gareth try epoxy resin mate to make your new knife handle.

Nice job! For the other knife, I'd stick with wood to keep the traditional look, but see if I could find a beautiful bit of burr walnut which would look seriously nice.
