      @@drasticg I was meaning it must be a fairly soft blade because it able to be straightened with a hammer without snapping.
      I wasn't criticising the way you did it.

    In the U.S. i have found the best for me is "Zip Strip" remover for rust, paint, and varnish. after that Ultra sonic for deep rust removal. Awesome job

    240 grit is a bit harsh for that knife, possibly 600 grit and finish with 1200.

    Nice job! For the other knife, I'd stick with wood to keep the traditional look, but see if I could find a beautiful bit of burr walnut which would look seriously nice.
