Actually we call it Kathi Roll in india, in pretty much nearly every state, specially the particular place where it originated in, Kolkata, mostly only UP citizens call it Egg Roll for some reason.
Matoke ndizi is the national dish of Uganda, I’m from east Africa Tanzania and I know it’s definitely matoke which means ‘cassava’ and ndizi means ‘it’s a raw green banana’. It is super delicious they always use pili pili mbuzi which means ‘bell peppers’ which enhances the taste 🤤
This is a street food in West Bengal..... we call it an egg roll. Instead of frying the chapatti and the egg separately, we fry it together and then put in vegetables, sauces, lemon juice, maybe some kind of meat and then roll it up.

You should do Peru next. I would say lomo saltado would be the closest thing to the national dish. I’m not counting street food, like anticuchos, or appetizers, like papa a la huancaina….but actual meals only.
