Will, how do you choose a Backing track that works for these examples? Can you pick them out by ear or is the chord structure your looking for or other clues?
I just go by ear, and try to find a groove that inspires me. This scale will work over pretty much anything in Am

@@leswhitham It's one of the 7 modes of the major scale: Ionian, Dorian, Phrygian, Aeolian, Mixolydian, Lydian and Locrian

I've got a question I keep asking myself, during these video you're using just a C harp but what if for example I'm using an A Harp in 3rd position and use the A major scale to play the "B mode" using B as my root note. Is that different in some way as if I took the C Harp to play in B use 3D as my root note?

Yes, every major scale has 7 modes. B Dorian is a mode of the A major scale you are right. Glad you are enjoying the videos!
Playing B to B on a C harp (BCDEFGAB) would give you B Locrian mode. B to B on an A harp gives you B Dorian (B C# D E F# G# A B)
