please . how long is it going to last as stored in the fridge ? can it last more than 6 months ?
Can I ask a question or two? I'd like do do some veg now to keep for over winter. So I ferment it now (June) and then when I put it in my cold basement do I close up the lid? will it stay in the salt water? will it get soggy if I leave it for a few months? will adding tannins help? should I leave in the cabbage leaf? what is the best way to store it for over winter? I don't have enough room in my fridge but I do have an unheated dark basement. any info would be greatly appreciated.
Hi Victoria, thanks for the questions! Yes, you could leave it for longer in a cold place, ideally your fridge or cold basement. The florets should always be submerged in the water, you can use a cabbage leaf on top and a weight. Best to keep the lid on, check every now and then if any pressure has build up by opening the lid. Unheated dark basement should work fine. We're not sure about the tannins, to be honest. Try it out with some glasses, then check in every other week to see how it develops. Hope that helps :)
How long will the completed fermented vegetables last without opening?
Hi Sharon, great question. Once they are fermented, you can keep them in the fridge for several weeks, even up to months. Just make sure they're not exposed to air. Hope that helps :)
