exactly what i needed. my cayenne, habanero, and jalapeno were the only ones that produced in fall so i looked up this exact recipe on google and this popped up lol (i only got only habanero fully ripe as well lol)

Have you ever tried a ferment (like you do for saurkraut) with your batch first? Delightfully complex flavor. I'm canning a scotch bonnet ginger batch right now, fermented it over a week. Yum!

I have never added a sweet component so I'm not sure. I have seen folks add mango,peach,or Pineapple!
