PERFECT Escovitch Saltfish Sandwich

This Classic Jamaican Sandwich is something else! I always bought one as an after school snack most evenings. Escovitch Saltfish and sweet buttery Cocobread are a perfect match, in this video I simplified the yeast dough so making your own coco bread at home is a breeze. Enjoy!
For the Saltfish:
Saltfish
Freshly ground pimento (allspice)
Oil (for frying)
For the Escovitch Sauce:
Sliced onions
Sliced carrots
Scotch bonnet peppers
Pimento (allspice), slightly broken
Salt
Sugar
Cane vinegar
For the Cocobread:
4 ounces coconut milk
4 ounces whole milk (for 8 total ounces of liquid)
2 tablespoons brown sugar
1/2 teaspoon salt
1/2 tablespoon instant yeast
1 pound all-purpose flour
1.5 to 2 ounces softened butter
Melted butter (for brushing)
Milk (for spritzing)
For Assembling the Sandwich:
Sliced tomato
Shredded lettuce
