  • Slice into thin pieces of half of the quantity of mangoes and grate the other half of mangoes.Add required salt ((the amount of salt varies from mango to mango based on the varieties and the size choosen.) And let the grated & cut mango soak in the salt for two days.
    Squeeze the juice from the salt soaked mangoes and dry the mango pieces and the grated one for 2-3 days in full sun.
    Add chilly powder,roasted methi powder and a fistful of mustard powder accordingly, to the squeezed mango juice, then add the dried mango pieces.
    Take a thick based deep frying pan ,put in on the stove ,add oil,be generous to add it,.once it is hot add red chillies ,methi seeds, black gram dal ,and after turning off the stove just before the oil is cooled down completely add Hing .pour this into the above mango mixture.#మాగాయ Magaya is ready to eat.
