As a 3D modeler and animator myself. I find this fascinating. I really enjoy looking into how game devs make their models. It helps me understand new methods of creation. Also as a brief note, at 15:50, you mentioned they would swap out Mario's faces. While I can't prove it, there's a possibility you are correct still. I think they actually used the faces as "Morph Targets". A method of animating where you have a "Destination" model (All the faces) for the main model to "morph" into. Without going too much into detail, they would adjust a slider or value and keyframe out the animation of Mario's face morphing into one of the targets for efficient animation. As they adjust the value/slider, the polygons/verts would slowly move to match the morph target.
To further this. They could also blend morph targets together to create several variations. And never fully use a morph target (Say they only wanted mario's cheeks only HALF blown up. they would use a lower value)

You've heard of "A+Start's Low Poly", now get read for "B-Select's High Pixel" which counts the amount of pixels and the color palettes of your favorite characters.

I still think that they would at least be overseeing and add some tweaks to the creation of the Mario model. That said, back then SEGA had worked on more 3D projects with they're mascot sonic, then Nintendo had with Mario, so it really is hard to tell for sure.
I think it's safe to say sera did it. They got permission to develope it, and are in charge of composing all of the music, even the remixes, so I think it's safe to assume they made the models. Nintendo probably provides guides on portraying their characters, similar to how a tv show will have a show bible for animators to use as reference.

The same amount of Tris the regular models use. If an "LOD" is available, it'd cycle to it once the camera distance moves farther. If worse comes to worse, camera clipping occurs.

Super Mario Odyssey Model from Detailed Eye View Point: Buttons are modeled, so are facial features (ex. eyes, eyebrows, mustache) Modeled Mouth Animated hands (no switch outs) The overalls are detailed so you see the line of sewing (random detail) Very detailed shoes, so I assume detailed all around. Hat has more detail.
Here are my suggestions: Pokémon, Harry Potter, GTA, Lara Croft, The Elder Scrolls. EDIT: Also a technical suggestion - you should maybe convert all model faces to triangles ("triangulate" in Blender) when showing wireframe, there is a lot of quads and even higher order polys on some models and it looks weird.
As a Mario Kart Wii modder, I need to say it's remarkable that you're loading a whole racing course with lots of textures and animations, plus course objects, items, CPUs... and the course model doesn't unload never, which means it's highly RAM consuming. Which explains a lot why Mario Kart games use low poly models. As far as I've tried with my custom MKWii characters, the recommended limit to get 0 lag nor freezes on full rooms is about 1500 triangles, although Mario's model there has 666 triangles (no jokes), and its level of detail model has only 192 triangles.
He skipped a few, but I think it would've taken too long if he included every possible Mario character (especially all the ones from sport games). I would've liked to see them and perhaps he can do those on the side for the people who are curious. Even with the ones he showed, the video still managed to be 18 minutes which is a bit on the longer side.
NSMB doesn't actually use 3D models in-game. They're actually pre-rendered sprites. Granted, I think he should have had a small section on the sprite based material, but since he focused on the 3D poly models, it's not surprising he didn't mention things like NSMB.
To be fair, its extremely hard to rip some character models from games. Probably turned out to be a lot more work and a lot more limited than they bargained for.
May you show the models of the characters in the Smash Bros series on the 3DS version so we can see how much effort they placed on that game as well please?

EDIT: Also a technical suggestion - you should maybe convert all model faces to triangles ("triangulate" in Blender) when showing wireframe, there is a lot of quads and even higher order polys on some models and it looks weird.

As a Mario Kart Wii modder, I need to say it's remarkable that you're loading a whole racing course with lots of textures and animations, plus course objects, items, CPUs... and the course model doesn't unload never, which means it's highly RAM consuming. Which explains a lot why Mario Kart games use low poly models. As far as I've tried with my custom MKWii characters, the recommended limit to get 0 lag nor freezes on full rooms is about 1500 triangles, although Mario's model there has 666 triangles (no jokes), and its level of detail model has only 192 triangles.
Less polygons means less places for zombies to bite you!

and NSMB2, Mario Kart 8, Super Smash Bros U, New Super Mario Bros wii / u, mario kart wii, etc.
He skipped a few, but I think it would've taken too long if he included every possible Mario character (especially all the ones from sport games). I would've liked to see them and perhaps he can do those on the side for the people who are curious. Even with the ones he showed, the video still managed to be 18 minutes which is a bit on the longer side.
Pretty sure the focus were for the main mario franchises. The adventure and kart games, which most people know him for.

NSMB doesn't actually use 3D models in-game. They're actually pre-rendered sprites. Granted, I think he should have had a small section on the sprite based material, but since he focused on the 3D poly models, it's not surprising he didn't mention things like NSMB.

Huh. I always thought that it was just a texture that just moved around a bit. Mario having individual mustache hairs sounds pretty impressive.

Whoah. The Super Mario Galaxy wire mesh isn't quads or triangles. It's a mix of both. Somewhat haphazardly even.
Plus a few N-gons (pentagons and higher).
