    Soup is definitely a meal in our house. I make different pot of soup every week from fall to spring. My family loves it. There are 3 of all right now, my 28 year old son just moved back to NJ from TX and is staying with us. He loves soup and says being home has not changed a bit. He loves having the left over for lunches or late night snacks!

      I love soup too but hubby's not the biggest fan. I would make soup every week in the cold weather too if I could! ❤️

    You might find pangritata an interesting addition to your pasta dishes. Italians make it by turning stale bread into breadcrumbs and frying them in oil until they are golden and crunchy. Top your pasta off with this instead of the more expensive parmesan cheese. Pangritata is even more delicious if you add some garlic when frying, or a pinch of herbs or chilli.

    Awesome as usual! By the time you cooked lunch I was thinking what the hell is she going to have for dinner... I was picturing English muffins with veggies on top haha... Your solution looked way better

      Lol! I think that's going to be my new lazy way of making dinner (or lunch) when it's cold ... it was dead set so quick & easy, and I could keep a bunch of those soup mixes tucked way no problem!

    Great meal ideas for this challenge. The Dutch curry looked good and could even add potatoes to thicken it up. Soup is definitely a meal in my house at least once a week for dinner. Freezes n reheats so well and so many different varieties of soups. Great ideas, thank you! ♥️♥️

    Our favourite meal is leftovers. Nephew did not grow up on leftovers and won't eat them. I won't cook anything else so he has to eat what we do or fend for himself. When hubby was unable to work for 14 months, and I was his full-time carer, we had vegetable soup everyday for lunch. The vegetables would be whatever was in the garden and I'd make a 3 day amount for the 3 of us (nephew moved in 2 years ago and hubby was unable to work almost 6 years ago). When serving I'd put some rice in our soup bowl first and put the soup on top. The rice somehow made it more filling.

      Rice is a great way to bulk out soup. We live off leftovers here, I'm always making extra so lunch or dinner for the next day is done & ready to go. Your nephew wouldn't last long with us! 🤣

    Always LOVE your extreme grocery meals.. added most of them to our family coz they are quick as well as cheap.. I always find most of the things are a bit expensive here in Perth than Eastern states... Nikki could you do video on how you do storage in your caravan,just need some inspiration for small spaces..

    Love those mixed frozen vegetables or I also use the uncooked vegetable and salad kits you find in Coles and Woolies too. Added to beef strips or mince or legumes with different seasonings; curry, tomato based, etc you can not only get dinner prepared in the morning and it will just sit there all day, you can also get 3 meals from the amount you make depending on the size of your family (just 2 of us here) they're so versatile, serve them over rice, pasta, mashed potato, sweet potato, steamed pumpkin, well basically use your imagination! I always have at least one pack in my freezer. Also, I love rescue food. I look for mark downs in anything I use on a regular basis and swoop. I got 3 loaves of bread normally costing 5.5 per loaf for 2- per loaf so it cost me 6- for a load of sandwiches. I just put the bread in the freezer and thaw out a loaf as needed, what a life saver in these expensive times!

    We find foodland often doesn’t had a large choice of frozen vegetables. We shop there all the time

      I was surprised to see so much was out of stock (in the frozen veg department) too. Not sure if that is common as well, but it definitely makes things difficult for those who can't access a larger shopping centre.

    We do have soups but depending on the soup I add vermicelli noodles to make it more filling or serve with lots of fresh bread which keeps hubby happy

    Frozen veg section has been pretty bare here also, the only stuff that's there is the name brands like McCain that's well over double the price of the homebrand bags. You have been killing it with these budget challenges, I remember it used to be $21 for a week for a single person before inflation and you have been feeding a family for cheaper. I've noticed that I've been watching a lot of vegan channels lately, I hardly ever eat red meat now and normally only eat chicken, fish and dairy. if I'm eating meat min my plate will be 2/3 veg. Pasta is always a good one, tin of tomatoes is 80c, pasta $1, small onion 20c. Thats 4 meals for $2. I've been oven roasting veggies and having them as a snack, roasted green beans have been my main snack lately. Hope you and the family have a great Christmas Nikki.

      This year has definitely been a challenge - between price increases & stock shortages, I've often had to change our meal plan on the fly (depending on what's available) & it's been tricky to stick to any kind of budget! But where there's a will, there's a way! Cutting back our consumption of meat & dairy has definitely helped, but also allows us to enjoy the occasional quality cut (instead of trying to include cheap meat in every meal). Honestly though, I'm really enjoying all the plant based meals & don't feel like I'm missing anything. I feel a lot more satisfied after my meals & some of the meals are so quick & easy to pull together. Plus, they can be super cheap, like you said! Who are your favourite vegan channels atm? (I'm always looking for new inspo!)

    This would be a hard challenge for me as I am gluten free due to a medical condition. It costs so much more to be gluten free but Im getting good ideas.

      I use to make almond & oat milk, but living in the caravan I prefer the convenience of buying the UHT. You definitely save more making things at home, but sometimes convenience wins out (and I don't want to spend all day making stuff from scratch when we're s'posed to be out there seeing the sights! It's a balancing act!)
