YerboGastro: How to make a home made pudding with Yerba Mate?

➤ How to prepare a yerba mate pudding at home?
Maybe some of us remember this taste from our childhood. Pudding is quick and easy to prepare home made dessert. Yerba Mate pudding is a taste which you won’t find in a shop!
➤ Ingredients:
50g Meta Mate 42
2 glasses of milk
2 2 egg yolks
1 spoon of potato flour
1,5 spoons of wheat flour
2 spoons of sugar
To make erva mate with milk you will find useful a mug with a big tea infuser or a french press for coffee. A kitchen mixer will be useful to stir the ingredients.
Time of preparation: 20 - 30 minutes
➤ Alternative ingredients:
Classic Yerba Mate, preferably moida grossa or despalada
Instead of cow milk, you can use coconut milk or other kind of vegetable milk
Sugar can be replaced with stevia, xylitol, etc.
➤ Put some flavour to your Yerba Mate Pudding:
You can add some spices to the milk while heating it up. We can recommend you cinnamon, nutmeg, cardamom, cacao and even chilli!
You can use less sugar and while serving, decorate your pudding with fruit syrup or honey.
➤ Preparation:
Heat up the milk until it reaches 80°C. Half of the hot milk pour into the tea infuser. You can also use french press. Wait 3 - 5 minutes and set aside to quench. Pour the rest of hot milk on mate leaves inside the infuser once more. Wait again. The longer you wait, the stronger taste you will acquire.
Now pour the second Mate infusion into a small pot and heat it up carefully. Add sugar and stir from time to time. In the meantime mix the cold Mate milk with yolk, flour and spices of your choice. Use a blender to mix everything thoroughly. Pour the mix into the hot milk while stirring. Continue stirring until the pudding it acquires a thick consistency. You’re ready!
IMPORTANT: It is very crucial to mix the flour in COLD milk and then pour it into the hot milk. If you mix flour in too hot milk, you will get little lumps of dough in your pudding. They don’t taste well.
