AMAZING Black Beans Recipe (Pressure Cooker) | Brazilian Cooking

  • Learn how to make Brazilian black beans with a pressure cooker! Brazilian black beans are a staple Brazilian dish - and one of the tastiest, richest meals ever! This is the perfect recipe for beginners: it's less elaborate than a feijoada (black bean stew) and made for the everyday. Add some Brazilian white rice, and you've got the ultimate Brazilian comfort food! This recipe requires an electric pressure cooker. I use a crock pot express.

    INGREDIENTS
    For soaking overnight:
    2 cups of black beans
    6 cups of water
    Ingredients for cooking:
    6 cups of fresh water
    1 sausage (linguiça or kielbasa)
    2 bay leaves
    Ingredients for seasoning*:
    1 garlic bulb (minced or grated)
    2 tbsp of cooking oil (vegetable or canola oil)
    Salt to taste
    *These amounts are assuming you'll be saving up to half your cooked beans for later! Double these amounts if you're seasoning the whole batch.

    Finally a black bean recipe almostas good as mine lol .
    I omit the sausage and add a half chopped fine cebola.
    Prefer pork fat for flavor but no good for the heart .
    Soaking overnight or at least 3 hours also removes mild toxins.
    So ya, seasonings salt, pepper, green pepper,3 organic bay leaves,3 cloves garlic.
    Pressure cook for 30 minutes, release Pressure, add seasonings and return to stove for another 30 minutes.
    Muito gustoso.

    I do it a little differently...
    Pour 500g of black beans in water for 4 hours, then discard this water and put a fresh one to cook using a classic pressure cooker.
    After that, cook for about 6 minutes, wait the pressure go out the cooker for itself. I like to add a lot of good quality raw bacon and kielbasa sausage to cook with the beans, once cooked, saute 8 large cloves of garlic and add the beans with salt to taste, let it cook for another 5 minutes without pressure. It's done! A typical Brazilian grandma's recipe, you can eat with rice, it's perfect 😋

    I love black beans. When I lived in Florida many years ago, I had some Cuban friends who introduced me to black beans and yellow rice. Later when I started learning how to cook I started cooking black beans and decades later haver never stopped.
    I have always liked beans of every variety but black beans remain my favourite. I can't find butter beans where I live, which is a sad thing. Fortunately black beans seem to be universal.
    This is a good recipe. A bit different from what I often make, so I must try your version.

    Feijoada is my favorite Brasillian dish . Crema de Bacalão is another . Of coarse Loooove Pastel , too

    My grandmother used to add a whole beetroot to it. The beet would suck in some of the juice and tasted amazing.

      There’s a technique called “pinga e frita” (drop and fry) in which you “drop” a small amount water to the soffritto in order to deglaze the pan and then keep frying. It prevents the soffritto to get burned and allows you to keep browning it.

    Nice. This is basically feijoada without the parade of meat products. My feijoada starts at 9 in the morning on Saturdays and goes through all weekend and we toss in whatever was on sale or what my friends bring over. We have it over rice. I'm going to try your farofa idea and I think that will make my black beans taste better. Obrigado.

    my maezinha would add ham hocks, sausage, chorizo, bacon/salt pork and if she had it carne seca, along with onion, green peppers, salt pepper, garlic. I think that was it.

    Thank you for this recipe and ingredients. I don’t have a Pressure Cooker. Why does this recipe require a Pressure Cooker?

      I think the amount of water and quantity of ingredients would change. You should look into other recipes that don’t require a pressure cooker. If you ever luck into a pressure cooker, come back to this video!

    I ate beans every day as a kid. My Honduran family used to joke that my body wasn't corn-fed. It was built with beans and rice.

    What kind of pressure cooker did your mom use to do this recipe back in Brazil?

      Until recently, my mom used the exact same stovetop pressure cooker we had in Brazil - an old silver pot dating back to the 80s. But now she uses the same electronic pressure cooker as mine, after I convinced her of its bean-making magic!

      The sausage was to add more flavor, but you can use bacon or simply with garlic.

    Will definitely be cooking this! Been using beans to live on a budget 😊 also neat trick with beans for freezing us to put them in ice cube trays, then you can portion them out instead of one big chunk, learned from this guy:

      Oh, nice! My mom would recycle plastic ice cream containers to freeze beans, which made for good family-sized portions. There was a lot of disappointment as kid when I opened the freezer to discover ice cream containers, only to crack them open and realize it was frozen beans! The ice cube trays are a good idea! Thank you for sharing! ❄

      It's a good tip. In Brazil we cook a kilo of beans at the beginning of the week and separate small portions and freeze them to eat during the week.

      Absolutely! Where I'm from, pinto beans are called butter beans - it must be because they're so buttery!
