Dear Enny, my name is George, I live in Scotland and have lived here for 3 years. I used to live in London an had a Nigerian next door neighbour who used to give me and my Daughter Jollof Rice when she cooked it, we both loved it. For 3 years we didn't have any, so one day my Daughter (Ronny) and I decided to give it a go and looked for You Tube vids. We followed your instructions to the T and after the first failed attempt (as we didn't used Tollyboy rice, So important to use Tollyboy) we made the perfect Jollof rice, I sent the video to my Nigerian ex neighbour and she was so happy we could now make it. You have an amazing way of demonstrating cooking it, thanks so much we are so happy to be able to make our lovely Jollof rice again. So well done, I will be looking at some other of your recipes. Hugs from Me and Ronny xxx

I made this in my Instapot and I had great results. I used the saute function for the onion, oil and tomato paste. I threw in the chicken stock and washed the rice. Pressure cooking needs moisture, so you don't have to reduce the sauce mixture before adding the rice. I cooked it on the rice function for 10 min. I flaked it with fork thereafter and all I just left the top off and flaked it w/ a fork to achieve the desired dryness. The Instapot will stay warm even when it is done cooking b/c it takes a long time for it to cool down and it will hold heat enough to take any excess moisture from the cooked rice.

Hello from Texas. My husband is from Zambia and when we married a wonderful woman cooked jollof rice for our wedding buffet. It was a hit! I tried this today and ended up with a burnt bottom. Not sure where I went wrong.... Flavor was still good. I need some more practice

Thanks for sharing this. Your recipe makes it look so simple to make but honestly, making jollof rice is one of my nightmares lolz.
I got a question though; You didn’t mention parboiling the rice, so could I parboil it?

    • @justenny6317

Lol thanks 😊. For this recipe I dont parboil the rice. I might share another recipe video soon to show another way to make Jollof rice by parboiling the rice. ❤

Watching this in 2020 has reminded me how Nigerian jollof 🇳🇬cooking process has changed over the years and now the majority of Nigerians cook it similarly to that of the Ghanaian jollof 🇬🇭 process, thanks to UA-cam 😁. 7 yrs ago the cooking was different.
