Homemade Speculoos- Cookie Butter

- The first time I ever had Speculoos, AKA Cookie Butter, it blew my mind. How had I not tried it before?
Well, truth be told, Cookie Butter is not the easiest to come by, so I came up with a recipe so that you can make it at home. It only takes 4 ingredients, and comes together in seconds!
Enjoy Cookie Butter on it's own, over some hot crispy waffles, or slices of Apple. It's so yummy!

INGREDIENTS
250 g, Cookies (Speculoos, Gingerbread, Oatmeal, Chocolate Chip, etc)
1/2 cup, Ghee (Clarified Butter)
1/2 cup, White Sugar
1/3 cup, Water
METHOD
Break up Cookies and add to a Food Processor with Sugar. Pulse until Cookies break and become crumbly.
Add Sugar, and Ghee, and process until completely smooth.
Transfer to a jar. Store at room temperature up to 4 weeks.

I made this twice and it was great! A couple of tips for those who are trying this the first time:
-using a food processor is wayyyy easier (mine is a 700w one)
-i added clarified butter first and then slowly added hot water until i achieved the consistency i wanted.
-when u first add hot water, it will look like a dark brown clump. Don’t worry! Just keep adding and pulsing it, and finally process it at the highest setting. It WILL come together.
-before it emulsifies, if you taste the wet & crumbly product wont taste very sweet. I think this is because the sugar hasnt diluted in the water yet. Dont attempt to add more sugar. I did that first round and eventually when it emulsified it became too sweet!
1/2 cup sugar was a bit too sweet for me tho, even after testing the second time. Next round i’ll try with 1/3 cup of brown sugar for a more molassey taste.

speculoos as far as I know a belgian cookie :) A decade ago a belgian mom took this recipe to an invention-contest and won and then lotus bought her recipe. But thanks for the video cause now I can try it myself :) Best cookie ever - I use it in my oatmeal instead of sugar.

Yeah, I wouldn't have thought to put such a thick fat and ghee is the healthiest one. Thank goodness for cultures mixing.
i think its because of Vitamix blender. will the texture be the same in normal blender/food processor?

what about the ginger, cardamon, allspice -- this is what REALLY gives the wonderful flavor -- in jars coming from belgium that yours is missing; & yes you could have gotten to the point much sooner than you did

Speculaas is Dutch, Speculoos is Belgian and tastes different. Speculoos heeft helemaal geen speculaaskruiden als ingrediënt! En daarom heten ze "-loos", ze zijn specerijenloos. Ik heb ooit ergens gelezen dat de speculaaskruiden zoals gember en kardemom vroeger heel er duur waren. Daarom werd er door de Belgen de geprobeerd om de Speculaas van de rijkere Nederlanders (die die kruiden uit hun kolonies konden invoeren) na te maken met meer courante kruiden, namelijk kaneel en gebrande suiker. Doordat de suiker gebrand wordt en dus min of meer gekarameliseerd, wordt speculoos ook wel eens gekarameliseerde koekjes genoemd.

It's not really that much sugar, especially when being mixed with that amount of ghee.
