    There's a word on the bottle at 2:24 that reads "dashi" (だし) and dashi is a stock used in a lot of Japanese noodle and soup dishes. Often they use fish flakes (as Sam mentioned), but they can also use a combination of Shiitake mushroom of kelp to create a stock.
    Also, the hiragana reads "soumen tsuyu", and "tsuyu" basically means 'soup' or 'broth'. Basically, it's a 'fine white noodle broth'
    also, the bonito flakes is another thing that is often used in the stock, often in combination with other 'dashi' in what they call 'konbi dashi'. It's basically dried tuna flakes

    Hey Sam, the Japanese word for al dente is just アルデンテ (Aru Dente) because it’s a borrowed word (hence the katakana).

    You're supposed to rinse udon in cold water to remove the starch after you boil it in water. Then you put it in broth and serve.

    If you want to specifically get a Bonito fish taste, look for Hondashi. As a Japanese myself, our family use it in our udon, as well as in many other dishes. Not much, about a coffee spoon for every 2 liters, only enough for the "kick". If you want more complexity, look for rice seasonings that come in triangular plastic packages unique to a brand called Urashima. You just won't go wrong with them (currently using Urashima's Katsuo Mirin, "baby Bonito" in Japanese), but test out everything, because there is a large variety of products and I am sure you can find that sweet spot.

    Sam, if you hate the whites of the green onions, try tossing them in the broth and let them cook into the broth. They're thick enough to stand up to a little heat if you leave them bigger. Then you can pull them out later, if you want. I *SUBSCRIBE* hate the slimy bois too, Sam is right. I try to use as much of my ingredients as possible.

    2:24 Thats tsuyu soup for soumen noodles. Soumen is similar to udon noodles cause they are thinner due to being stretched when made. They are popularly eaten cold in Japan during the hot summer months with a rich tsuyu dipping sauce.
