  • Tuna Patties, Wasabi Dipping Sauce and Crispy Crunchy French Fries
    *Can absolutely substitute Salmon too
    (4) 5-ounce cans Tuna in water, drained
    4 Green Onion, chopped
2 Eggs or Mayonnaise can be substituted
    1 Tablespoon Yellow Mustard
    1 Tablespoon dried Parsley Flakes
    Zest of a Lemon
    Juice of 1/2 Lemon
    1 Tablespoon Worcestershire Sauce
    1 Teaspoon Smoked Paprika
    Sprinkle of Cayenne Pepper
    Sprinkle of Lemon Pepper
    Pinch of Salt
3/4 of a sleeve of crushed Saltine Crackers
Mix all the above ingredients together well. Dredge in the following.
    DREDGE RECIPE:
    1/2 cup All Purpose Flour
left over 1/4 sleeve of crushed Saltine Crackers
Sprinkle of Salt, Smoked Paprika and Lemon Pepper
Mix all these dry ingredients and make patties the size of your palm with the tuna mixture. Gently press into the dredging on each side and place onto a plate.
Pour 3 tablespoons of oil into a cast iron skillet on medium heat. Let warm and begin frying the patties a few minutes on each side until browned. I place the whole skillet into the oven to finish cooking on 350 degrees F while I fry some French fries.
    WASABI DIPPING SAUCE:
    1/2 cup Mayonnaise
    3 Tablespoons Wasabi
    Salt and Pepper
Juice of the other half of the Lemon
Stir together and dip your patties and fries in this for a nice flavor bomb.
    CRISPY FRENCH FRIES:
1 large Russet Potato peeled and sliced into sticks
Soak in cold water for 20 minutes to pull out some of the starch. Drain but do not dry.
Sprinkle salt and pepper and all-purpose flour on them and toss. The moisture from the soak of the water will make the flour stick well and will fry to crispy bits on the outside of your fries almost like you have battered them. Fry in hot oil until they are as brown as you like them and enjoy!

Oh my gracious, your French fry recipe is the same as my Granny's. We used to call them granny fries. I used to make them like her, and then I didn't make them enough, and I forgot how. My granny french fries have been failing. Thank you for this recipe so much. We have always had fried salmon patties, but we have never had fried tuna patties. I must try the fried tuna patties for my family. We love lemon juice, and we love lemons. We are not much on lemon zest or lemon pepper. However, I'm determined to try it exactly the way you make it.

Thank you so much for sharing your story of Grannies fries with me. I love that. My Daddy didn't use lemon zest either and we loved them.

Thanks, Amy, for another great video. In my family, it was mackerel patties. I'll have to try with tuna, they looked delicious. Game changer, for me, was getting an air fryer, for French fries. And yes, I heard the crunch, when you all ate the fries. Hey, from New Mexico.

I love the food smelling like the smells of my childhood growing up with my Granny, my Memaw, and my Momma cooking. Those are great memories. I want my house smelling exactly like the cooking that went on when I grew up.

Your tuna patties looked really good, fries looked great. You can master anything you are my idol. John Murray is so cute, he gets excited for his meals. Pampered Chef sounds like a good deal as long as you can maintain your sanity with all that you do girl! haha

No parties so I can try it sdn if it is too much I will quit. That's my plan girl. Thank you for your feedback and your concern Cindy. I consider you a good friend girl😊💜
