PLEASE Barry, make "Homemade Street Food" a series! This would be an amazing series of videos, showing people how to make delicious stonkin' street food at home.
Use potato starch, not corn starch! The dough without dairy holds together well enough to be shaped by hand - you can cut it into strips like you did with the first one, roll into straws or use a silicone ice stick mould to get a better shape. Also, if you don't want to fry all that dough, add one egg, roll the dough into walnut sized balls, press each down with your thumb to slightly flatten them and make a shallow indent, drop into a pot of boiling salty water, wait until they float and cook for 2-3 minutes and voilà, you have gumiklyjzy (kluski śląskie - Silesian dumplings) that go great with a stew or roast (the thumb prints turn into gravy pools, YUM).
Personally, I love chicken and dumplings. I have been toying with the idea of using potato dumplings in my next batch. What do you think about using the Silesian dumplings in the chicken and dumplings dish?

I'm not sure they will survive cooking in a soup, but if you prepare a creamy chicken stew separately and pour it over the Silesian dumplings, it will work well. I love them with a mushroom sauce!

When making a cheese sauce, add a teaspoon of whole grain mustard - mustard and cheese have a great affinity for one another, but here, you can't taste the mustard, but it does make the cheese taste 'cheesier'.
I have the little churro making gun that you load the dough in and it pipes it out like a caulk gun. It leaves hole in the middle. I bet you use that and then pipe sauce into the middle after. Long fries with ketchup in the middle... yum. Or pipe sourcream, butter, and chives... loaded baked potato long fries.
Now there's an idea worth exploring! Mayo, BBQ sauce, curry sauce, ... As an alternative could use one of those biscuit/fondant guns - usually no hole in te middle but a lot of funky shapes.
for me, its one of these recipes I admire, that look super tasty.. but no, I dont think I would ever do them myself. I really hate frying stuff and I live now alone, so I dont even have the excuse to cook for other people.. :/

They freeze well (can be frozen raw or cooked) and you can heat them up the same way they were cooked or in a microwave.
I honestly thought the potato skins would get sucked up into the heating element. 😂 I'd try these, but I don't think the mashed potato would make it to the frying pan. 😋
Considering the first one worked fine. I think the "failure" of the second attempt was that you overloaded the pan with too much. Thus you needed to just stick with doing one at a time. Therefore, I do not believe the piping was necessary, you just needed to stick to the original method of laying one in the pan at a time.

Love the content but a word of advice with using that cooking spray. It isn’t advised to use it in an airfyer because it has quite a low smoke point and the lecithin in it will eventually build up a residue and be almost impossible to remove from the air fryer. You’re better off just putting cooking oil in a spray bottle
These take me back about 26 years 😅 I used to get "RAS Patat" after a day at the stable. I'm very sad they aren't as easily available now in the Netherlands as then 😢

You don't need to add flour, the corn (or even better - potato) starch keeps the dough together well enough.

Probably because people in USA think in corn so even if original recipe used potato starch, they substitute it for corn starch.

I think these types of fries are ones that would benefit the most from a double fry. Once to give them rigidity and twice for that real crunch.
Dutch RAS patat is very similar. Usually not that long because they use a dispenser for that so they could make it as long as u want.

Looks a lot like a XL version of 'Ras patat'. Ras is a brand name I believe, patat means fries in Dutch. It's mash thinly piped directly into the oil.

This is the first time I've seen a cheese sauce made just dumping the milk in. Usually it's a little at a time until it it smooth, then the rest
Suggestion - use a skimmer (not tongs) to remove fries from oil.
How about stain glass potatoes, or tornado fries?
