Love to watching it ! Can you explain why do you throw away so much coffee grounds like that ? Also for the milk left in the jug, why not use it again?
he throws away the coffee to ‘dial in’ the coffee for the day - it’s essentially calibration. If he used the coffee that he is throwing away, the coffee would not be tasty. You can’t reuse milk left in the jug for a couple of reasons. Firstly, you can’t cross contaminate between dairy and non-dairy milks, or between nutty (almond) and other (oat) milks. Secondly, and more importantly, milk cannot be reheated. It’s a big barista rule and is enforced for a couple reasons, first is the ‘crusting’ of milk on the inside of the jug after not being used for a while, and also because the chemical makeup of the milk is destroyed after heating the milk. reheating the milk would result in a ‘burnt coffee’. There’s a few more reasons why you can’t reheat milk, but those are a couple. 👍
Sorry, correction from my end in the ‘burning’ of the milk. that’s not techically true. More correctly, the proteins in the milk break down, degrading the milk's texture and taste, making it grainy, rubbery, and less sweet (stole that from google)

What grinder is that, it’s a grinder for a business but all your equipment makes espresso so easy. I have a niche and a Breville. I’m just beginning though. That grinder and the auto tamper is awesome, the auto tamper is too much for home use, i have a tamper that’s spring weighted.
