My parents from Bacolod City, my Mom used to cook Valenciana seemingly same as Paella. I watched celebrity chef, he went to Mexico's largest Saffron farm, in there was explained why saffrons are very expensive because in every plant has only 2-3 saffron flowers. Love your cooking, simple, luscious, well-executed , easily to follow.
i really adore this guy.. tall, dark, handsome, sport enthusiast and brilliant minded. He is really a multi-talented person. he was my ultimate crush during high school days... i watched all of his sitcoms, tv guesting, commercials and movies (with Sharon and Cherry Gil, Snooky Serna, Nadia Montenegro, Alice Dixon, Janice de Belen, Vilma Santos and Dawn Zulueta) back in the day. I even save money from my baon just to be able to buy goods in Bench Glorietta like shirts, socks, hand towels and perfumes. My officemates and I got the chance to meet him and was able to shake hands with him a decade ago in UP technohub during our lunch time and he was sporting an Americano suit which makes him so gwapo. I was so speechless then when I saw him and at the same time super kilig ..

I like the minor things that are usually unnoticed - handwashing , the sound of roosters (and whatever else), the way he chops the ingredients himself, the wide open kitchen, and many more 😊

Paella is a very challenging dish to cook. Mayor goma shld be given credit for trying this out. My humble suggestion is for ink sacs of squid to be removed first before mixing squid into the dish. More power mayor!

My mom got organic saffron from Costco. She used it in risotto, basmati rice, beef stew or tomato based sauce. It provides a golden color to a savory dishes.

Yes, saffron is very expensive even here in in the US. Looks yummy! I also put mussels and green peas to add more color and flavor.
May alternative, ako gumagamit ng saffron powder which is andoon yung aroma ng safron at color niya. Kahit dito sa saudi mahal din ng saffron.
