I made this daiquiri recipe in my new Slushi and it is wonderful but I wish it was a bit thicker. What is the trick to tweak the recipe to achieve this? Less alcohol or less simple syrup or both? Could I add a thickening agent to accomplish this? Thanks again!
@CallMeHarris I’ve not seen that before. I personally wouldnt be too interested in thickening up a slushie, but if you wanted to go that route I honestly don’t know the best product to use.
I have bus wasn't my favorite. Don't know if I'm just used the the blender versions more, but you drink slushies faster and they are more dense. So with lots of coconut milk I don't love it as much, def worth exploring tho.
If you could work on a recipe with pre made margarita and strawberry margarita mix I would appreciate it. I use the Zing Zang pre mixes a lot now around the house
Cost, ABV and Flavor. I don't think it's worth it to use more expensive spirits in a a slushie most of the time. Also didnt want to use all of a 47% ABV. And since flavors can get dulled in a slushie, having the Probitas makes what would be a pretty generic Daiquiri a little more flavorful.
Trying to find a ratio of alcohol to add to a premade slush mix. Do you replace one part of water with one part alcohol or add the alcohol to the recommended mix ratio?
This might sound like stupid question, im setting up a home bar, and my mrs love a daqari. This looks like what im looking for.. But, she likes to changer her flavours, is it possible to add some kind of flavouring after or during the pour into glass to make either strawberry or Mango daquairi? Or wpuld you need to add the flavouring to the mix? Thanks

Can you use saline as part of the drink recipe. Also, can you use xanthan gum in the machine to preserve uniformity as the drink starts to melt while drinking?
Yes you can use saline. You can use xanthan but need to use way less then you would in a blender. Don’t know the exact amount yet, but if you used same as a blender cocktail you’d ruin your drink. Still not sure how well it will work, but will be testing that in the future.
I had a slushie bourbon drink at a soccer match last weekend, and it had separated significantly in less than twenty minutes. I noticed your daiquiri doing the same as the video progressed. I've used xanthan gum to hold blended drinks together with some success. Is that something you can use with this machine, or is that a recipe for disaster?
You can use xanthan but you would use much less than a blender cocktail and I don't have the exact numbers. Plus you need to add it to the mix beforehand in a blender. The machine can't disperse the xanthan properly. Slushie drinks do seperate but I don't think it matters as much in a slushie as compared to a blender drink IMO

In your video of the calculator, you mention that tequila has brix of 0 and in the new calculator, the first section of spirits even defaults to 0. Most references on the web say that tequila has Brix of 11 (vodka around 14). Should I really be using 0 for these spirits instead of actual brix?
So that would be because someone put a spirit in a refractometer which will give you a reading, but that’s not sugar it’s alcohol. You can’t brix test anything with alcohol and get an accurate reading. There should be little to no sugar in spirits. I think tequila legally can’t have more than 1% sugar. Even ones with added sugar like Plantation XO rum is only 2.4 brix. So if you know it’s highly sugared you can add it in, but shouldn’t play a big difference.
One is partly Jamaican and brings much more Of the tropical fruit flavors. It’s also higher in ABV, which doesn’t work well in these machines. Overall the purpose was to blend them to get the flavor I wanted and an ABV that would work in the machine.
Both, but mainly getting it to freeze. The spreadsheet does solve that problem for most drinks but there are wildcard ingredients than can alter things. So lots of trial and error and sometimes and that can mean lots of waste.
Not Tiki, but I wonder how Morganthaler's frozen Negroni would go in there. Perhaps that can then be adapted into a frozen jungle bird. His article is an interesting read in any case.
I don't know the exact math but the amount of salt needed to significantly lower the freezing point would be well beyond what you would add to a cocktail. Ocean salt water freezes around 28 degrees F so a 4 degree decrease, but its is significantly saltier than anything you would ever drink. I'd also guess straight Coca-Cola has more salt than adding 5-ish drops of a 20% saline solution per cocktail.

If you want thicker slushies with larger ice cyrstals its all about the water. So lower everything else or simply add more water.

Pre mixes are all different. They should have directions for how much alcohol to add, otherwise you’re just guessing.

You can. As long as the sugar numbers are in the right zone it will work.
@ gave it a go last night with a combination of sugar syrup and real guava puree and it froze really easily. Tasty AF!

Probably. Anything that falls in line with the recommended sugar and alcohol numbers will work.

There is a Nashville bar (Pearl Diver) that does their pearl diver in a frozen drink machine. Could you do a pearl diver recipe for the Ninja?
Did the ice separate out of that daiquiri after drinking part of it?
Not really. Drinks the same as a normal commercial slushie you’d get.
For the slurpee, could you dispense into a whipped cream dispenser and charge it with CO2. Thus fixing the flatness?
I don't really know. Someone woul need to test it.
