- Hi Friends, I've gotten quite a few requests for Persian Breakfast dishes, so I thought I would start making a few videos going over some popular dishes.
So, we start with "Nargesi" (نرگسی اسفناج) which is "Persian Spinach & Eggs". It is similar to an omelette but also quite a bit different. Also, Nargesi is not exclusively a breakfast item, it can be eaten anytime of the day, and even served as an appetizer, but it also makes a great breakfast dish or breakfast sandwich.
This is simple to make, healthy, vegetarian and the ingredients are stuff you probably have in the house already. So, let's start making it!
Ingredients List:
- 500 grams or 1.1 Pounds Spinach
- 2 Onion
- 5 Eggs
- 1 Teaspoon Salt
- 1 1/2 Teaspoon Black Pepper
- 1 1/2 Teaspoon Turmeric
- Cooking Oil

I am definitely trying this dish. I made your gharch polo last weekend and it turned out great. Well, not exactly. I overcooked the basmati rice but that was totally on me. Your videos are fantastic. Keep ‘em coming!

@@AliR77777 Yes! Most of my favourite food is made with garlic! If you can eat shallots, I find they are a good substitute. I also find onion powder to be stronger and more garlic-like than fresh onion. You could try that.

2. I absolutely love this recipe! Food is the common denominator across our world. Growing up in an Italian family in NYC, this dish was made often (minor ingredient adjustments) but food ties us all together! I've spent time in the middle east, and completely enjoyed. It was usually the food that connected everything.

It's this ever made with sabzi? I made Gormeh Sabzi this week and it looks like those vegetables would go nicely. Or is there another name for that? I fell in love with Persian food the first time I had fenugreek. Well, that and chelo.
Hi, it will not be a very pleasant taste mixing with Sabzi imo. Glad you enjoy Persian Food, and I hope the Gormeh Sabzi turned out great

Hi Yousef, thanks so much for sharing your great recipe. I absolutely love Nargesi. I was wondering if you ever add nutmeg to it? I have eaten Nargesi at a Persian restaurant in the Gulf and it had just a hint of a spice like nutmeg or cinnamon so I wondered if that is a regional variation? Many thanks I will definitely make this at home for my family - actually just for me!! I'm the one who loves it so so much, I could eat it with every meal!

You cook "Nargesi" in mistake way, it's omelette. Garlic is one of Nargesi's ingredients; onion isn't used in this dish. Please do not change the recipes on your own. Meanwhile, so many eggs aren't used for "Nargesi".
