  • #Costco products always has the most value. #Chilean #seabass is the one I often have several packs in my freezer. Not able to find those close-to-tail pieces recently encouraged me to look for new receipts. With the thicker side of 2 inches, this fillet is perfect to grill. Plus, it is my favorite way of cooking: Marinate & Cook.
    【Ingredients】
    1 lb Chilean Sea Bass
    1/3 cup Sake
    1/3 cup Mirin (Sweet Wine)
    1/3 cup Miso Paste
    1/4 cup Brown Sugar
    3 tbsp Soy Sauce
    1/4 tsp Pink Salt
    Chopped Green Onion

Delicious fish. Your tip to make sure the marinade is well used on thick cuts of fish is brilliant.

Hi- Why do many people say to remove the miso paste before broiling? I heard it can burn. Do you not agree?

Do i need to add soy sauce ? Seems like it would be salty with the Miso Paste already added.

I did add both soy sauce (brand: KIKKOMAN) and a pinch of pink salt since the Miso I use is not that salty. Sometimes it also depends on how long you marinate. The marinade can be a little salty if only marindate for few hours. I would suggest to skip salt and maybe add 1-2 tbsp of soy sauce for the first time to figure out the saltiness of your miso and soy sauce. Soy sauce here not only add saltiness but also provides flavor, umami, and color to it.
