Using a pound cake box mix and replacing the water/ liquid in the recipe with pineapple juice will make this easier. Perfect for college students I think

Ingredients
⅓ cup butter, melted
½ cup brown sugar
1 (20 oz) can sliced pineapple, drained and pineapple juice reserved
13 maraschino cherries (optional)
2 eggs
⅔ cup sugar
⅓ cup pineapple juice, from canned pineapple
2 teaspoons vanilla, divided
1 cup sifted flour
½ teaspoon baking powder
½ teaspoon salt

It's the old version of Betty Crocker's pineapple upside down cake. Recipe below.
Topping:
1/3 cup butter, melted
1/2 cup brown sugar
1 can pineapple rings
Maraschino cherries
Walnuts if you want
Cake batter;
Wet ingredients:
2 eggs
1/2 cup sugar
6 Tablespoons pineapple juice
1 teaspoon vanilla
Dry ingredients:
1 cup flour
1/3 teaspoon baking powder
1/4 teaspoon salt
Use a 9 or 10 inch round cake pan. It can also be made in a 10 inch cast-iron skillet. I do not add my vanilla to my brown sugar. I add it to the wet ingredients for the cake batter after whisking the eggs and sugar and after adding the pineapple juice. Otherwise, I make it the same way as in the short.
IMPORTANT! Let the cake cool 10 to 15 minutes in the cake pan before flipping, so your cake doesn't break apart.

I made it. I think I needed to add more juice or more fluid to the cake batter. It ended up being very dense. To make it more enjoyable, I put it in a bowl and added a little bit of milk to eat it.
