      When I quit working at age 71 I started seriously controlling what I ate according to McDougall. It took me six years but I lost 60 pounds. I was 77 then and I’ve maintained it for three years. I’ll be 80 next month.

      This was great..absplutely...but I don't know what a bisque is and I don't understand what you do to the vegetables in the instantpot and the liquid stuff to make it b a bisque...whatever that is. Sorry..i never read a recipe book.

    Sounds like a great recipe but onion is considered toxic to dogs use caution when feeding it to them.
    Notice how long Ester has stood in her kitchen , see how well she is moving and her speech is smooth and clear, sharp ,strong lady in her 70's. Great role model

    This video changed my life and my perspective....as a 73 year old....5'3"....155 pounds....and as a 5 year vegan....NOW I can see myself losing to my goal weight of 135(which I never thought would be possible).

    Such an inspiring life story. I make a soup like that, sometimes with zucchini instead of cauliflower. I usually add red lentils and turmeric and black pepper. I chop everything and cook in a regular pot and my hands have not fallen off.

    Today May 13, 2021 is my first day eating the AJ WAY! I am 70 years old, Lori Neighbor is my pastor's wife and I will be documenting my results. THANK YOU Esther - for such a time as this - I moved from Galt, California to Chapala, Jalisco, MX 10 years ago. My energy level is in a pit, and my feet hurt when I walk.

    Lovely women and lovely show. Disappointed we didn’t get to see the finished cauliflower bisque. The recipes and advise are terrific. I have been on this lifestyle plan for 10 years and at 82 I can proudly say that I am on zero meds and feel wonderful (except for a broken shoulder and rotator cuff!!) 😊👍👍

    Great going! You’re looking fabulous! One of the things I just started doing is to forage in my backyard. These veggies that grow on their own like dandelions, wild clover, etc have many more nutrients and cost me nothing. I’m slowly learning to identify these wild growing plants which I find to be an exciting new hobby. Also, with the Covid-19 virus I have a steady supply of the best food nature has to offer! You might find this an interesting new approach.

      We have started with cucumbers, tomatoes, chives, parsley and cilantro and some green peppers and of course love our pomegranate and orange trees and grapes.

    Instant pot is my cooker. Looks like hers is huge compared to mine. Yes, absolutely people if I could afford to buy an instant pot here in the land of north Canada, you can buy one. I use mine constantly, like every day even two times a day.

    Totally enjoyed Ester really needed this and stayed up late to watch the whole thing. Thank you Chef AJ for all you do for People eating this way. I enjoy your videos so much. Since starting to eat his way again it has helped me so much. Especially since I am the only one eating this way in the house.     Hi Esther from NZ and another 76yr old fairly new wfpb follower. I just thought I'd let you and AJ know what Dr Greger (of How Not to Diet Fame)says about cruciferous vegetables. He insists that they must always be cut before you cook them because they contain Glucosindates and Myrosinal
    when cut these two combine and release a wonderful compound sulforaphane which is heat resistant and extremely good for you (helps prevent cancer among other things) If these vegetables are cooked whole the myrosinal is destroyed. - In fact Dr Micheal Greger says cut and wait 45 mins before you cook them. It's simpler to cut and store them cut up that way you know you are getting the maximum benifit of these marvellous vegetables. ie cauli, brocolli, sprouts, etc
    I do hope you don't mind my passing this gem on to you both.

    Also try oats Savory Style and serve with a big side of Greens, like collard greens or sautéed Swiss chard. Makes for a fabulously healthy combo,, and a really good way to get some greens in for the day!

      True! Still... the microwaves destroy most of the nutritions. It's original purpose wasn't harmless (think ww2)

    I use to work at Winchell’s donuts before it turned to Baker Bens donuts and it’s still here in Roseville, wonder if it was one of his since it’s close to Sacramento. I never ate any when I worked there thank goodness.

      I would guess it’s 600 calories for 1 pound of food

      Tracey, I actually wasted time/money trying to follow Dr.Terry Wahls’ Protocol, and attending her Seminar in Iowa in 2017. I wish I’d known about Dr.McDougall & Dr Swank when I was first DXd w/PPMS when my 1st 🧠 MRI revealed nearly nearly 30O brain lesions.

    Dr J Fuhrman was my 'mentor' and now I have an option. No, I refuse to use a microwave. Presently I am weaning myself off of condiments. Four weeks without Best Foods mayonaise, ouch, and ketchup. No bag or box 'foods'. Black rice is good. If I can find it again. Now that I am in Northern land of ice and snow Canada. Also a member of the 70's club. and having a real weight challenge since the stay in your home covid dilema. You are awesome so glad I found you. I use to live in Reno, NV which is a hop and a skip from Sacramento, CA. Chef AJ was talking about eating 5 lbs of food and if I do that I'm not looking like her. Keep up the great work you two. maybe i will try the oats again, I had discarded it after I got sick one time. Oh yes, my instant pot is my buddy. No more chopping veggies, lesson of the day.

      Hi Anna Freeman. There are so many options in life and we get to choose. Condiments just make me (as a food addict) want to eat more and my "I'm full" button doesn't work very well. The good thing about this virus is it has kept some of us out of restaurants and the homes of other people and if our kitchen is clean, no worries.

I have not got the book of Dr John McDougall yet I'm just watching the videos especially CHEF AJ you are uplifting.     I eat my oats raw. I don't hear anyone talk about it. I only use organic, and yes, I agree about the potatoes, must be organic for me.

      not good for weight loss.. Raw oats are 1,800 calories per pound, when cooked only about 300.

      I don’t understand. I sometimes eat rolled oats cold like cold cereal, but with berries and soy milk. So that is worse than cooked oats somehow?

      dense at 1,800 calories per pound versus 365 calories er pound so less favorable for weight loss when not cooked in water. Water adds weight and volume with no calories.

    I thoroughly ENJOYED this video. Esther is just lovely person - she's so helpful to those of us who need to do the same thing. I am so inspired by her story! Chef AJ: Which book of yours does Esther keep referring to? That cauliflower bisque sounds good. Which book has that recipe, and other 'easy' delicious ones of yours - and the info about the 'red line' foods that I won't have to worry about weight gain if I stay in that category.

    Since I, 67, started eating, and feeding my husband, 83, WFPB on 19 Sep 2018, 94.5wks ago, I have lost 74lbs--from 190 to 116--at 5'7"--and maintained that loss for the past 6mos with no effort. My husband has lost 32lbs--from 158 to 126, at 5'6"--but, more importantly, has cut his cholesterol by more than 50% using only a very low-dose (5mg) of the statin that he took (10mg) for 17 years--before finding Dr McDougall's work--with no visible change in his lipid panel.
    I began this journey by watching "Forks Over Knives" and immediately began looking for books to read by T Colin Campbell, Dr Calwell B Esselstyn, and Dr John McDougall. I was motivated by a desire to assure my husband's longevity after he underwent an open heart surgery (OHS) for an aortic valve replacement (AVR) and a triple coronary artery bypass graft (CABGx3) surgery on 15 Nov 2017. Having read a great deal about CABGs, I realized that many people were having multiple OHSs for that condition and I simply could not imagine putting us both through that traumatic experience again.
    I initially used "Prevent and Reverse Heart Disease" by Dr Esselstyn and "The McDougall Program for Maximum Weight Loss" to guide us to a WFPB way of eating but discovered Jeff Novick, Chef AJ, and Esther Lebeck Loveridge along the way and have greatly appreciated and benefitted from all your fine work. I've read both of Chef AJ's books and have "read" The Pleasure Trap in ebook format and in Audible format with narration by Chef AJ. At some point along the way I discovered Esther's Nutritional Journey and joined her FB page. It would be impossible to thank the two of you, Chef AJ and Esther, adequately. The fact that you both consistently demonstrate in word and deed now very simple it can be to eat the WFPB way has made a big impact on me. I owe you both a great deal and thank you very much for your commitment to educating the public in how to eat healthfully and sanely. You are both wonderful role models for people endeavoring to make the transition from the SAD to a WFPB way of eating for the purpose of losing weight and/or reclaiming lost physical and emotional health. Thank you from the bottom of my heart. Please continue to inspire others as you have me. I am delighted that you chose to interview Esther today, Chef AJ. Bravo!

I live in rural central France so I am always 9hrs ahead of you there in Indio, SoCal and I have to watch/participate in everything in "replay" mode. Thank goodness you leave crumbs behind for those of us who are far from the action! I lean very much toward the same approach to food prep as Esther and shy away from recipes and cooking as a creative outlet. I keep us fed with a bit of variety but nothing like the beautiful food-related work of many of your guests. Your interview shows are sterling. I hope that you continue to produce them for many years to come, Chef AJ. I can't wait to see/hear your upcoming new book, even though we never eat "dessert!"

    Doesn't salt enhance the flavor? Is salt totally eliminated? What about your body needing salt?

      Yes, it enhances flavor and also stimulates your appetite. There is adequate salt in vegetables and other whole foods, so it's never totally eliminated.

    I’ve been starting to follow the eating plan and I am just keeping track of calories to see and I go over calories a lot and I am still hungry. Am I doing something wrong or what can I do differently?

    Macular pucker??? That's a huge deal that her eye healed! I became blind from that surgery.

      I think I still have macular puckers, cataracts and pseudo defoliation...but, in spite of that, I do not need to wear corrective lenses for driving. So sorry about the bad results of your surgery. My goodness.

    Question, how can you lose weight when you eat a lot of carbs on plant based ? I would like to start it but afraid of the carbs for example in oatmeal and potatoes

      Loose skin after massive weight loss can occur regardless of what diet you're on, however, the slower the weight loss the better chance you give your skin to bounce back

      In the recipe I used, it called for 6 cups of water and 3-4 cups of plant milk. I use 3 cups of Almond Milk.
