This is a system separator. You can set this by going to "Engraving Rules" (usually the hotkey ctrl shift E) > Instruments > System Separators > Appear when ... staves or more. This will set it to automatically turn on as of a certain number of staves.
To grab all of the lyrics in a line, just click on one of the words and press ctr shift A. And then to align them all horizontally press ctrl shift R. Is that what you meant?
