  • How To Make Amazing Vegan Fish Sauce
    Today we’ll take a look at how to make our own vegan fish sauce. No fish is gonna be rotting in our sauce, all we will need is some sea-weed, shiitake mushrooms and a couple of other things that we’ll let ferment for a few days and our fishless fish sauce will be as good as you wouldn’t believe. 😊
    ✳️ INGREDIENTS LIST
    Prepare ‘Fish sauce’ broth
    o 2 tbsp wakame
    o 5cm piece ginger (peeled and crushed)
    o ½ tsp sesame oil
    Soak in 4 cups of water (just under 1 litre) overnight, then strain.
    - 10cm sheet Kombu
    - 3 dried Shiitake Mushrooms
    - 4 cloves Garlic (crushed)
    - 1 tsp whole Peppercorns
    - 1 cup Light Soy Sauce
    - 2 tbsp Sea Salt
    - 1 tsp Miso Paste
    - 2 tbsp Pineapple Juice
    - 1 tbsp Sugar

    Will it still taste okay without the mushrooms or are they an important ingredient? And if I do add them will the mushroom flavor be strong?

      Hi, you can do it without the mushrooms, but adding them gives it a nice, deep, earthy flavour. You don't have to worry, it won't add a strong mushroom taste to it 😊💚

    Is the use of kombu essential or can I use other types of seaweed, like nori or some fresh seaweeds I can get from the local market?

      Sure, any seaweed will do, but in my experience, kombu produces the best results 😊💚

    Do you ferment it in the frige or at room temperature?

      Hi, you ferment it at room temperature, but away from direct sunlight. So, if you just keep it in the kitchen, it'll be fine. Afterwards, you can keep it in the fridge but it is not necessary 😊👍

    How long does it keep for?

      If stored in a dark and cool place (pantry), it should last for a good couple of months, perhaps even a year 😊💚💞

    Can nori sheet be used instead of wakame and kombu?

      Good question, potentially yes, but ideally stick with kombu, because nori is very thin and it would turn it into 'porridge'. 💚😊😀

      Difficult to get wakame and kombu and is very expensive in my city.

      Oh, I see, well, you can try to use nori, but in that case I would suggest to use either a cheese cloth or a fine strainer. 💚😊💖
