As I know corn starch can be substituted with arrowroot powder. I also wonder if adding Nori seaweed or konbu kelp will give it a fishy flavor.

Sorry for the late reply. Ideally, you would use dried mushrooms, as they are more intense in flavor but you could also use fresh ones instead.
