- As a little girl, I grew up in my grandfather's house in front of
Carbon market in Cebu where he had a grocery store. I remember looking out of the window into the sidewalk watching the hotcake vendor as she prepares, mixes and cooks these street style hotcake. I would salivate every time she brushed the warm hotcake with margarine and then dipped them in sugar. As a young child, it was heaven for me. I watched her every Saturday or holidays when I had no classes. Maybe this was my first awakening in my interest for cooking. The way she expertly flipped those simple hotcakes mersmerized me. In my mind she was a master chef. It was a magical moment for me. In this tutorial, I am trying to recreate her recipe. I made it as simple as possible because this was how I remembered the taste. At that time, I still had no concept of what a recipe was. I just remembered the ingredients she put in. In my version today, I added yeast because I find that the yeast added lightness, fluffiness and softness to the hotcake even when they were no longer warm. Come, join me as I go back memory lane and remember that little girl in me watching magic happening right before her eyes.

Nostalgic. Thank you for sharing this. It reminds us of our simple childhood. No fastfood, fancy pastries just a simple and easy to bake snack or we can simply buy it sa eskina.
I have delicious memories of streetfood hotcakes in gradeschool from the couple who makes them in their rolling stall by the jeepney station . The hotcake(literally) was slattered with STAR margarine then condensed milk which I preferred, then presented in a banana leaf .One was not enough for me. I grew up in a small rural barrio an hour ride from my school in the city.
I learned a secret from you why their hotcakes were so soft , supple and tender to the bite. Thanks so much.

I find this recipe very unique because this is the only video I watched that has vinegar and dry yeast as part of the ingredients. I will try this on my rest day. Excited to serve this to my kids.

If they are already cooked, yes you surely can eat them tomorrow. You can even freeze them and reheat when you are ready to eat. If uncooked, you can keep the remaining mixture in your refrigerator no longer than 8 hours because the yeast will sour. I prefer to cook everything and freeze. Very convenient when you want to eat. Just microwave it for less than a minute.

Iba po ang recipe. Add more eggs and separate the eggwhites from the eggyolks. Fold the beaten eggwhites into the egg yolk mixture. Thank you for watching my videos. I am happy to know na nakatulong ako.

1 kilo flour or about 8 - 8 1/2 cups. More accurate if you weigh the flour.

Sorry but hindi ko na intindihan ano nangyari sa mixture mo? Bubula talaga yan kasi may yeast at baking powder. Halo in mo lang. Anong ibig mong sabihin sa nag evaporate? Ibig mong sabihin kumunti ang mixture mo? Marami na nakagawa nito ang okay naman ang gawa nila.

I use full cream powdered milk.

You should oil the molder.
Where can I buy that kind of waffle iron, please?
If you live in Cebu, you can buy it in Caro and Marie. If you live in the Philippines, you can buy it in the wet market or in Shopee. If you live abroad, use an electric waffle maker.
What will happen if i wont add yeast?
It is okay. Yeast makes it fluffier and lighter. You can double the baking powder if you don't add yeast.

Wala mi powdered milk, ok lng kung fresh milk? Same ratio ra sa water or less? Daghang salamat Chef.
Use only 6 cups water and add 1 cup evaporated milk.
All the other ingredients same lang.
Chef im currently making this recipe now..i notice there are bubblesnin my.mixture that is because of the yeast..im cooking it in slow fire..is it safe to serve to the kids?
Why can't it be safe to the kids?
Sure! What you need to do is stir the mixture everytime you cook so the bubbles die down. Same as when you cook bibingka.
Wala pong recipe na hindi po one kilo ang flour?
Divide the recipe if you want to make smaller portions. For example, if you only want 1/4 kilo flour, just divide all the ingredients by 4.

Can I use cake flour?
It is too soft. You can add a bit more flour. 1 cup all purpose flour is equal to 1 cup plus 2 tbsp. cake flour.

how much is the yield for this recipe?
Depending on the size of your waffle maker. The pinoy waffle maker comes in 3 sizes. I made 36 pcs from large but they were quite thin.
@@ChefRoseofCaroandMarieCebu Thanks Chef! I did this anyway. I love the recipe, it's really the classic taste! I doubled the recipe and used 1/3 cup to measure the batter. Yield was a little above 100. Safe to say, 50 pcs for the 1/3 cups. 😊
