  • The Filipino Egg Pie is distinct from other egg/custard pie because of it’s brown topping which is made by the foam of the egg whites. There are many ways to make this pie. Traditionally, the eggs are beaten and hot milk or syrup is added to produce the foam. Newer versions would have all ingredients mixed together and then extra egg whites are whipped to produce the foam and this is added to the egg-milk mixture. Any version is fine as long as you are able to produce the foam on top which gives the egg pie the nice, brown topping. I have always loved egg pies. I hope you will too!
    Chef’s Notes:
    1. Make sure you bake the pie following the temperature and baking time mentioned in the video.
    2. The right temperature and right timing is crucial to make a smooth custard filling. Baking the egg pie at a high temperature will cause the pie to form a dome in the oven which will collapse when it cools down. Your custard will have many big holes which is not pleasant to look at.
    3. The initial temperature is to ensure that the crust starts to bake so the filling will not seep into the crust and make it soggy.

    Hi Chef! Thank you for sharing! I've been trying to make one by following this recipe to the letter. It tastes great! However, my custard filling comes underdone especially at the middle and runny. I'm using a 45L oven. I cook with 175C for 15mins then 150C for additional 1hr. Fan off. The top color is already dark

      I believe your oven is too hot and because your oven is small, the pie is too close to the sides of the oven. Reduce oven temp next time.

    Is it different in making the crust on tarts Chef?

      You can use the same crust for tarts but I use a different crust for tarts which are easier to handle. Check my Cashew Nut Tarts video tutorial.

      The smaller is an Oster table top oven. The bigger one is a La Germania electric oven -- European series.

      As long as no egg mixture spills into the pie plate, you can easily lift off the egg pie from the pie plate once the pie has cooled thoroughly. Do not remove while it is hot because you will break the pie.

      Yes you can but evaporated milk is more creamy than fresh milk.

      Thaw the pre-made frozen crust. Put in the filling. Bake as instructed in the video. OR you can pour the filling in the frozen crust and bake longer during the first baking temperature so you give time for the crust to thaw and bake.

      Sa bakery supplies store po. Kung wala, pwede oil but mas flaky ang shortening. Pwede din butter but you need to use cold water kasi natutunaw ang butter pag ma init.
