- Pulvoron or Polvoron is a type of unbaked shortbread cookie which is molded and wrapped in colored paper or plastic. Most Filipino kids grew up eating polvoron. Our moms used to make them at home but nowadays you can easily buy them. Polvorons are so easy to make. They are traditionally molded, however, I have seen kids eating them out of a container with a spoon which is a great idea because you no longer have to mold and wrap them. For best results, use a good quality full cream powdered milk. Butter will give the best flavor but a shorter shelf life. Shortening has a longer shelf life but has a bland or flat taste. I use a combination of shortening and butter. This works well for me. For the flour, you can use any kind of flour - all purpose, cake or bread. They will all work and will taste the same. Play with different flavors and variant ingredients like rice crispies, cheese, dried mangoes, nuts, chocolate chips, etc. Shelf life of the polvoron is dependent also on the variant ingredient added. This is an activity that you can do with your kids! Good luck!
Chef's Notes:
1. In my kitchen, I sometimes have left over cake flour, bread flour, all purpose and flour which are unlabelled. I put them all together and toast them and use them for polvoron. This is a good way to use your leftovers.
2. If you are toasting flour in small quantities, you can do it on top of a stove. If you are making in big quantities, I suggest that you toast your flour in the oven. This is less labor intensive since you need to stir the flour only once every 10 minutes and you can toast a large amount of flour at one time.

Masarap po xa. I use her procedure in preparation for polvoron na paninda ko. Mejo kapagod Lang konti Kasi unlike sa majority of procedure na isang haluan lang ng harina, asukal,gatas at liquified butter/margarine before magdagdag ng flavors, this procedure focuses on each flavor at kagandahan is controlled mo ung tamis at creaminess ng polvoron.

Thank you chef. I was encouraged to make polvoron when i saw a falafel molder in the store becouse its hard to look for a polvoron molder here abroad. Im now using it for molding my polvoron. Although my mama has her very yummy version of polvoron i still watched this video and your recipe is almost like her recipe; my mamas recipe she use a specific brand of butter and milk which is really tasty .

Thanks for the recipe! If I want to add flavoring for is 1/3c a safe amount for every 2c of flour?
1/3 cup flavoring/essence is too.much for every 2 cups. If you mean, variant ingredients like nuts, cheese, etc., then 1/3 cup is enough.

Thank you po chef for your method of preparation of polvoron. Iyan n po ginagamit ko sa pambenta. Margarine at shortening lang po gamit ko, mejo mhal na pag nag butter flavoring eh. Nonetheless kahit wala butter flavoring masarap po ung polvoron ☺️So far, I have cookies and cream, coffee crumble, ube, graham, peanuts, biscoff and chocolate

Question lang po mam kasi pag nagtutunaw po ako ng shortening magkasama ko na po kasi cla isinasalang ng margarine. When po idagdag si potassium sorbate pag magkasabay tunawin shortening and margarine. Thank you po.
Follow up question lang po sana mam regarding potassium sorbate. In my estimate po I need around 21 tbsps of shortening in preparation for polvoron with 7 flavors. Question po mam kc sa video nio u indicate 1/4 tsp of Potassium sorbate for shortening. But what if mam halimbawa isang tunawan ng shortening like in my case 21 tbsps of shortening. Mga gaano po kya kadami potassium sorbate ang needed. Is it pitong 1/4 tsp din po ba ng potassium sorbate or ung isang 1/4 tsp is enough na for 21 tbsps of shortening. salamat po for attending to my questions. More power to u chef

Pulboron was my dad’s business when I was still young. His pulboron is so simple with just 3 kinds of ingredients. Flour, sugar and margarine molded and wrapped with Japanese paper. I made pulboron as my second job to improve I added powdered milk and wrapped in cellophane. I got lots of customers. As I watched your video I decided to copy your styles in making pulboron. I’m sure I can get more customers due to the taste and styles that are so attractive. Mam, May I know, if I will use oreo cookies, do I need to include the cream? Do i need to wait for the toasted flour, melted butter & shortening to get cold before mixing? Or it doesn't matter to mix it even if its still hot?
It is better to wait for the toasted flour to cool down a bit. Easier to handle.

I used bittersweet chocolate but semisweet, milk or dark is okay to use too. Bittersweet chocolate is just my personal choice.
Maybe we can use melted chocolate chips. I haven't tried it yet.
Chef whats the oven temp for toasting the flour?
300F for 25- 30 minutes. Stir every 5-10 minutes.

Do not use butter or margarine. Use good quality shortening like Primex or Crisco and add butter flavor.

chocolate compound or branded chocolate like goya Hershey.
Either one is alright to use. Whatever brand you prefer. Compound chocolates are cheaper.

Yes you can. Amount will depend on the brand since they have different intensities. Add gradually and taste the mixture. Add more if needed.

The most important difference - Shortening becomes solid at room temperature while oil remains liquid. So for polvoron, we need it to become solid so that the polvoron will be firm and not oily.

You can buy the molder in a bakery supplies store.
Mam can we use the graham method in creating ube, coffee flavors?
Yes you can but the graham flavor might over power the other flavors you add in. Anyway, try it and experiment with it.
Hello Chef! May I know why do you preferred to use a Shortening? Aside from prolonging the shelf-life ...Others dont use it but the rest of your ingredients are being used by them.. is the shortening effected the flavor? 😊
Also what alternative can be use for the absence of sugar? And can give a sweet taste to the polvoron?
Shortening prolongs shelf life and it is cheap if you want to go into business. Shortening does not have much flavor compared to butter or margarine but it does not need to be refrigerated. If you are into sugar-free, you can use sugar substitutes that you are familiar with but take note that you need to adjust the quantity of the butter or shortening that you will add.
