Filipino here living in Ireland! I would say the food scene here is starting to boom (before COVID happened). My favorite would definitely be the Irish Breakfast and the highlight is the Black and White pudding. And don't forget the irish sausage ( I don't know if its traditional Irish but Irish sausage is definitely unique from my perspective)
Do West African food! We have some really good Ghanaian and Senegalese joints in DC and I had that same experience that y'all just had except it was "Dude, this is where soul food comes from." So many profiles that are still in American Cuisine (especially soul and more broadly Southern) are there.

Cottage pie is traditionally made with beef. It's Shepherd's pie which is made with lamb.
