That reference of trying to explain what curtido is using kimchi as reference was the same thing but vice-verse way for me trying to understand what kimchi was the first time I tried it. Yep. I'm salvadorian. And yes, I really appreciate this video, guys. There's a lot of other good stuff the world is missing of salvadorian food. The Mariscada (seafood soup with cream - don't judge it until you try it - , our version of the mondongo soup (cow tripes soup with yuca and plantains in it and more curtido), the riguas, the atol de elote, and more.

I think the one they called "Salvadorian Veggie" was loroco, cause you could see the loroco stem. Some places started making jalapeno ones, just cause its popular, but yeah not traditional.
Japapeño is not a Salvadoran ingredient, FYI. "Encebollado" refers to "cebolla" (onion). The vegetable one is made of "loroco" the Salvadoran national flower. Tamales don't usually include yuca.

I went to a restaurant in El Salvador that had over 30 flavors of pupusas that was crazy and to think the in the states there a only a few flavors! Also Salvadorean horchata is different from the Mexican one, we use horchata de morro which is a green fruit the looks like a soccer balls and grows on the thick branches

The red sauce for the pupusas has a little spice to it, but it's not overpowering. It adds a lot of flavor and helps moisten the masa, which can be a little dry sometimes, especially if you're eating a few of them.

Personal favorite: Pupusa revuelta de arroz But you also gotta have sopa de gallina india, yucca frita con chicharron, empanadas salvadoreno, pollo encebollado is great, there is so much. Our food really is savory. My Salvadoran breakfast: platano frito, frijoles fritos, queso fresco, aguacate, y cafe.
