I want to ask if cake flour and all-purpose flour are the same because I've tried making Taiwanese sponge cake twice but still failed. Could it be because the flour isn't right?
They are the same except that cake flour is milled more finely. If you can’t get cake flour try sifting your plain (all purpose) flour extra times and be very very gentle with the mixing. You might not get exactly the same result but it should be good enough
I tried making it for the last 2 days in a row now. It came out pretty good! Very simple and quick. If there is only problem of this recipe (if there is) it requires lots of eggs-so it would be economical if you have to kill eggs prior to going for a long vacation, etc.

نفصل 5بيضات و نحط البياض فالمجمد و نخلط قطعة صغيرة زبدة و نضعها في كيس حلواني و نضعها جانبا في صحن نضع 45 غ زيت و نسخنو و نضيف27غ كاكاو و نخلط و نضيف 55غ حليب و نخلط و نضيف 50غ سكر و 1غ ملح و نخلط(في صحن نخلط80 غ فرينة+15غ نشاء+2خميرة كيميائية)و نغربلها فوق الخليط الأول و نخلط و بعدها نطلع البياض و نضيفلو 10غنشاء و نضرب و نضيف ملعقة للخيط الأول و نخلط و نضيفو للبياض و نخلط و نفرغ في مول الكيك 20×11×11سم مفرش بورق طهي و نعمل خط متعرج من الزبدة على الوجه و نطيبو على 160درجة لمدة45دقيقة

U can use cooking oil instead of butter.....bcz I think it's like major thing in cake recipe....it makes your cake soft and smooth+fluffy
