This father/son combo is great as well as this recipe, ATK, keep them !, 3 things I love, #1 father watches son like a hawk, # 2 father says no to not mixed enoughed, #3 father says no, to much filling, he is teaching his son & not putting him down, pray/hope these fellers stay with ATK

I wasn't a big fan of Chinese food when I was younger, and I don't cook much. I grew up in New Jersey, but lived in the San Francisco Bay Area for about 9 years in my 30s and 40s. There out west I really loved the quality of all the different Asian cuisines, as well as the great Asian markets where I could get the very best ingredients, I was overwhelmed by the different kinds of seaweed, mushrooms, seafood and fish roe and noodles/wrappers available, I haven't seen anything like it back here in New Jersey where I live now. This show makes me want to cook, and go to Hong Kong! Thank you so much for your presentation!

LOVE this!! I appreciate the tips like covering wrappers with a damp paper towel. My family hasn’t shared much on making food with me because they find small things “too obvious to tell” so (for example) I wind up stuck with ambiguous Internet directions that yield 3 different kinds of ways to mess up wide rice noodles (and no success at chow fun 😭)
Also love the descriptions as they go! Wonderfully accessible thank you so much!!

Dim sum restaurants bring out so many options. But if you're not familiar, no problem. There are three dishes that will totally sustain you and are guaranteed to satisfy even if you're not that familiar with the cuisine:
    1) Shumai, shown here.
    2) Cha shao bao: sweet, slow-roasted pork in a fluffy yeast-leavened bun. Depending on the region, it's either pronounced "char siu" (rhymes with "bar hue") or "cha shao" (rhymes with "blah how".
    3) Chang fen, which in Mandarin rhymes with "long den". I'm not sure on the Cantonese pronunciation. Basically rolled ravioli (but the pasta is very delicate) with shrimp inside and a sweetened soy sauce drizzled on top. Imagine shrimp cooked just perfectly, so it bursts when you bite into it, rolled up into pasta that is so ghost-like that it practically vanishes in your mouth, with a delicately sweet and savory sauce.
So basically, something with pork, something with shrimp, and something with pork and shrimp together. What can I say? It's hard to go wrong with those elements.

This is an excellent recipe and demonstration! Yes, I agree w/ the father - this recipe seems to be better than most, if not all, of my restaurant experiences in the U.S.. Also, ~half of the population has a REAL BIOCHEMICAL aversion to cilantro, so it is perfectly okay to omit the minced cilantro or substitute it w/ a bit of minced green onion in this recipe. Thank you.
