I added this salsa to the first salmon recipe and cooked on the pellet smoker. HUGE HIT is an understatement. Thank you for the recipe.

Suggestion: Oil the wood on the smooth surface before you put the salmon on it. Helps keep the skin from sticking when you go to remove the fish. Just a little bit of oil helps.

Smoked fish especially salmon is the bomb. And the mango is a nice touch as well but I do like some heat in the mango so roasted jalapeño or even better would roasted habanero.

Smoking the sugar in the rub would also give a great touch of smoke.

Can you put the cedar plank in a smoker, is that too much smoke?

Love the channel. Question. Ive asked this before and can't even find an answer online but why do you guys remove the blistered skin off the peppers? What's the reason for it? My wife and I did it after watching another one of your videos but didn't really see the point in it. Plus my wife loves the char flavor on anything...my only thought is maybe because the skin can stick to your teeth?...

The skin doesn't carry a lot of flavor and can sometimes result in stringy pieces that are similar to chewing on wax paper. Also, once the skin is charred it tends to not taste super great.

With regards to the seasoning… she said, “This is “kind”of “like” a fake seasoning”?

I *do* enjoy salmon; I *do not* enjoy mango.
