To make chestnut puree you need to omit last step ....baking. After boiling, cool the nuts, peele the skin off, bland it, add sugar, vanilla, rum extract and you will have the most delicious filling for any cake.
I just make a long cut on the round side. Then put in cold water and when the water just reaches the bill put them in the oven 425 for 15 minutes and the shell comes off easy. No brown skin sticking to them.
@@saulrollason1622 I put them on the stove in cold water and a teaspoon or tablespoon (based on how many of salt. Boil for 2 or 3 minutes than drain and wash off salt with cold water. In 425 degree oven for 15 or small ones or 17, 18, for large. The shells with that inner skin come off easily.

You don't need to boil. If you have the time just soak them overnight. They'll open nicely in the oven after that. There are other videos on youtube that show this.

However, the chestnuts you buy to eat, from the family Castanea, are safe to eat raw. The misinformation about chestnuts having to be cooked seem to originate in the UK so I’m not sure what they are eating & calling a chestnut. Remember people thought tomatoes were poisonous too. Don’t spread ignorance, fight it with truth and knowledge.

If they are not fresh it doesn’t mater. The skin won’t come off anyway

I use an electric knife. It works great.
And it's dangerous too...nearly cut my finger doing it :(

This is not exactly quickly and easily if each one needs to be scored all the way round like this.

You can soak them a week it doesn’t matter. If they are not fresh it won’t peel rasy
Cooking a chestnut makes them taste awful. I will just deal with peeling them.
