One of my all time favorites! I loved it since I was a young boy. Yes, it is known to be a peasant dish just like Pasta Fasul (Fazool) or Fagioli, depending on which part of Italy you’re in. My Italian grandma made it a few times every fall/winter. I make it a similar way, just less the carrots, as I like the escarole to be the star. One other thing is that I use a can or two of Cannellini beans in the food processor which makes a thicker broth, especially good when adding chicken broth. My problem in recent years is that none of the grocers here in Colorado stock escarole. Really!!! WTF!!! The last one that stocked it was Kroger’s (known as King Soopers here in Colorado). A produce clerk there told me that escarole wasn’t selling, and it was being thrown out. Probably due to the fact that kale is now the rage. Not even Amazon owned Whole Foods carries escarole. Fun fact is that I can actually order some online from Amazon, but sorry I’m not going to do that. Like I once told you Jack, you must have some Italian in your blood! You’ve made a number of great Italian dishes over the years. If you have a suggestion for an escarole substitute, please let me know. It’s got to be close match though, or the meal won’t be the same. gotta say it like an italian (SH-CA-DOL- E - FA-ZUL) and you have to finish that with some grated pecorino romano and red pepper flakes! Usually I skip the flakes and throw in a dried hot pepper in the soup while it cooks. That's the stuff

I blanch the escarole first to remove any bitterness. No bacon either, use olive oil and after all ingredients add a splash of white wine. Otherwise the same.

I dig that he is a true blue Connecticut Yankee/ New Englander,who has gone out from there, worked around different places,& eventually returned to bring/ bring back much good food experience to people,as I say came across these channels mid 2018 sometime,& enjoyed them periodically ever since, we got to eat there July 2019,,hung out @ the bar quite awhile after enjoying the evenings music. As occasional drummer, I dig Daddy Jacks sense of music/ rhythm, love that kitchen percussion from time to time,yes. My very best to him, his family,staff, everybody online / YT/, during this year have gotten to enjoy his kitchen home cooking!

maybe cause i had a knock off . but i had what could have been a harrowing experience with a porcelain - coated , caste iron pot . it was browned on the bottom like yours is was making some spaghetti sauce and had browned some pork that would normally flavor my sauce. i took the pork out, and was sauteeing veggies in the pork fat. re-introduced the pork and was getting ready to add tomatoes and spices normally i'djust dump and go , then cook it in the oven for 2 hours just before i was going to put in the tomatoes and sauce , i noticed what looked like a thyme stalk (i dont use thyme in my sauce) it was a chard of porcelain . a 2" chip of porcelain had come off of the bottom and was about to be disguised (until serving) by the tomato mixture . kinda frightening . could have served that to somebody. sometimes i share these big -batch foods with some neighbors that wouldnt normally cook this for 1 or 2 people well, needless to say , i'm glad i found that and have switched to heavy caste aluminum sorry the train left the track , love this recipe . am always looking for a pasta alternative , and i love escarole
not it for me. next time instead of burning the dutch oven add grease to the pan. what is ecaserole? lettuce? i thing i watched one of your video before. youtube supports anyone who claim to know how to cook? even if you look unhealthy on camera and not cooking well! 15 minutes of my life lost, thanks. I think it's America too, you know how to cook when things come together properly, but when you just adding boil beans to dry carrots and onion and you then add leaves at 3 minutes or seconds without consoméing-like simmering your food, you know you dont know how to cook and anyone can just do that! ok peace. 15 minutes coomplete waste!
