It wasn't clear to me in the video with the Nanoleaf bulb, what Thread Controller HomeAssistant was using to discover and connect to the bulb. Can you describe that part of your setup a bit more? Home Assistant was using the Thread controller connected to Home Assistant for discovery. In my case, the Home Assistant Yellow and/or the Home Assistant Skyconnect
New to HA so pardon the base question. If I have a Matter device that is thread enabled will HA automatically use thread to communicate? I want to make sure my devices don’t use WiFi
I run HA and HB simultaneously and I've pretty much phased out HA, and only have 3 active plugins on HB. I have over 50 devices in my home and under Apple's HomeKit and with Thread and Matter, I don't see the need for the added complexities of Home Assistant. It's powerful, but only useful if you want to use off-brand devices. HomeKit and Thread/Matter are advancing and soon there won't be a need for HA/HB.
The challenge with HomeKit on it's own is there's not much in the way of nuance in the Automations. There's some 3rd party tools that can make it better, but Home Assistant's Automation engine is far more flexible.
What hardware you have attached to HA for the thread network?

If your Home Assistant can communicate over Thread, It will connect to Thread.
Matter over Thread devices generally cannot connect to WiFi
Please do this on an android device as well... Our app isin't showing a camera.
I don't have a physical android device to do this on which is a requirement. Sorry
