RECIPE GLUTEN FREE SPONGE CAKE:
Ingredients
225g/8oz caster sugar
4 free-range eggs
1 tsp vanilla extract
225g/8oz butter, cubed and well-softened, plus extra for greasing
250g/9oz gluten-free white self-raising flour
1 tsp gluten-free baking powder
Method
Preheat the oven to 190C/170C Fan/Gas 5. Butter cake tin.
Beat the sugar, eggs and vanilla until very pale, smooth and thick. It’s best to do this with electric beaters or a food mixer for around 5 minutes: the whisk should leave a thin trail of batter when lifted from the bowl.
Add the butter, flour and baking powder and beat together for 1-2 minutes more until smooth.
Add mixture to the tin and smooth the surface. Bake in the oven for about 40 minutes, or until well risen, golden-brown and just beginning to shrink back from the sides of the tin.
Remove the tin from the oven and leave to cool for 15 minutes before turning out on to a wire rack.

RECIPE CABINET PUDDING:
Ingredients
A nice mould
190g/6 3/4 oz stale sponge cake
10-15 plain biscuits (or amaretti biscuits)
cognac or dark rum, to taste
custard sauce
10-15 glacé cherries
Method
Preheat the oven to 180 degrees Celsius (or 350 degrees Fahrenheit) or put it on the hob on low heat just like we did.
Slice the sponge cake in 1cm (3/8 inch) thick pieces and arcane in a deep dish with the biscuits. Drizzle with a generous amount of cognac or rum and let it soak.
Lightly grease the mould.
Make the custard and let it cool slightly while you fill the mould. Place a few cherries in the base of the mould, then add a layer of sponge cake and one of the biscuits, then add a few more cherries and another layer of sponge and biscuits. Repeat until the mould is three-quarters full.
Pour in the lukewarm custard, then place the mould on top of a trivet or inverted saucer in a deep ovenproof pot that can completely cover the mould. Fill the pot with boiling water halfway up the sides of the mould, place a saucer on top of the mould and put the lid on the pot.
Carefully put the pot in your oven (or the hob). Leave to steam for 1 hours, then allow the pudding to cool for 5 minutes in the mould before attempting to turn it out on a plate.
Serve with a bit of custard or just on its own. Enjoy!

Lol, he did have a tiny tiny breakfast and we had the pudding about 5 hours after we made it and no lunch so I can't blame him at all. Stay safe too.

It was originally a French pudding 'Poudin a la chanceliere'. As in Chancellors pudding and then become Cabinet pudding, as I suppose the greedy old chancellor couldn't keep it all to himself and had to share it with the Cabinet 😊. Think we might try this soon it looks lovely and filling.

The grocery store was out of all flour yesterday so I'll try again today. Thank you so much for sharing! You two stay safe as well!
@@loriar1027 Oh no, I know that sadly not everything works with gluten free flour. Hope you can get some, we hate that some people are super selfish and are stock piling, it's just not okay.
Kirsten I probably should have adjusted the other ingredients but I just substituted gluten free flour in a recipe for bread. I’ll try to find a better recipe. And I’ll definitely try your recipe for sponge cake!

What a lovely and yummy distraction for this day of isolation. People are having a difficult time here but I am fine and have no trouble staying busy with projects inside and out but I am concerned for others. Some of my garden guys came by today and helped me put some lovely semi circular benches around my maple tree with some big urns that I'll have to plant up soon. I love all the activities in the spring getting the garden ready for summer. Love the prints and curtains and the cake! Thanks for sharing, take care!

It looks lovely! Thank you so much for sharing. I think it may be called cabinet pudding because all the items would be found in the cabinets with no need of refrigerated items like milk and eggs. I do not drink alcohol, I will have to think what to substitute. May God bless you with good health!
Thanks so much! It seems that the cabinet pudding has a political reference but they don't really know how. The sponge has eggs though. I don't drink any alcohol at all but I'm okay with it in dessert (maybe twice a year) - I could image that maybe apple juice works. Be safe as well.
