    A tip when serving, pour soup into a bowl of just noodles, then pour the soup back into the pot. This ensures that the broth doesn't get watered down, as well as cold.

    This is improvised Pho, in traditional recipe we don't put apples, celery, carrots, cloves, cinnamon, cabbage in our stock, either toasting ingredients in the pan. We toast the onion, ginger and other spices on the open fire to make it fragrant and smoky flavor and use a lot of bones to make a strong stock. This chefstep recipe has the "white" soul in to it, almost like making traditional "white" stock where you use onion, celery, carrots, bones and spices.

      Noor-Al-Deen P possibly mushroom flavored dark soy, you need something with a good amount of glutamic acid

    You can make the leftover-vegetables into fritters by cut them smaller. Do not waste your food. :)

    You can lift the flavor up by poaching the noodle in the broth for about 20-30 secs. Trust me I how to make pho.

    Too complicated and western-influence in a good and tasty Pho. First of all, get rid of all those vegetables for the broth ( for those who are saying it is a wasteful of vitamins, we dont add vegetables for the broth, except for chargirlled onions and ginger. It is supposed to be a bone broth, not vegetable or turkey stock omg!). Secondly, add in whole toasted cardamom. Last but not least, a good broth is all come down to patient. It is not by any mean hard to make, yet not that easy, but every Vietnamese family has their own recipe and cook Pho whenever possible. My mom always told me to never close the lid while simmering the broth since it can make the broth go cloudy. I personally like to add more rock sugar because I originally from the South and have a sweeter tastebud. I do not like to add fish sauce directly to the broth while cooking because it can make the broth went sour, but my husband adds in anyway and we always debate about that :). Make Pho people, be patient, it is simple to make, will take you couple of hours but thats come down to the waiting game only.

      You know, the name of the dish is Leftover Turkey Pho, of course it's western influenced. it's like vietnamese people making another version of pizza or korean bbq and no one argues with them about it...
      We all know how to make traditional Pho, but in this video they didn't make it that's why they named it Leftover Turkey Pho
      Also, vegetable broth is highly considered for making any kinds of soups both in West and East

      Hungry By Nature traditionally, no celery, apple, and cabbage. we have dried onion. besides, we roast ginger and onion before putting them in. and defintely need to simmer at least 3hrs.

      Apples is pretty common for those that do not want to use the rock sugar. We use apples to skip the sugar.

    Good video. Just don't like the recipe. There are a lot better recipes for pho that don't require wasting so many ingredients just to get a broth

      A lot of people prefer the sweetness from vegetables instead of bones, it's just a stylistic difference.

      My family makes the broth the same way. You just use the veggies and bones for the flavor and discard them after.

    But, don't you waste a whole lot of vitamins and goodness from all those vegetables and herbs in making the broth?
    as I see it, you are now just eating some noodles and a few pieces of meat (with a little vegetable for garnish).

      Noah Hershkop yeah, that's the problem, I don't thinks it's that simple. You boil these for hours. Not all vitamins are that heat resistant. (Some are ;-)) Also not every nutrient will be extracted in water as they are not so soluble.
      You might have more nutritional value left if you make something like bone broth and add properly cooked vegetables later.... only that wouldn't be pho XD. You might make it look like pho however?
      Maybe chefsteps, who want to have the science back in cooking, would like to look into this?

      The orginal recipe of PHO does not have vegetables. The vegetables make the soup have natural sweet taste. in vietnam, we have 2 kind of soup in PHO. In the Northern, the sweet of soup is only from boil the bone (umami only) . In the North, people like the soup is more sweet so they add the sweet in someway like that (adding the vegetables). If you think you waste the vitamins you can remove the apple, celery, carrots, napa cabbage (there are not belonged to orginal recipe)

      that's some very useful information. It's very interesting to know that the vegetables are mainly used to give some natural sweet taste to the dish.
      I think I'm going for bone broth and then adding some veggies and meat later

      You're gonna want your broth to be clear. Just a light rinse, doesn't affect flavor.
