It’s a different freakishly small wooden spoon, actually. This is just a little spice spoon that isn’t freakish or small for that purpose. On the other hand... the ‘real’ freakishly small spoon was a long handled cooking/stirring spoon, the same length as the standard wooden spoons, but just with a freaky-little spoon-bowl on it. Sorry. But at least the memory of the other one is still fresh.....

Just in time for the Kentucky Derby and a Hot Brown, which is an unappealing name for a totally decadent “sandwich.” My favorite cold turkey sandwich had sliced green apples in it. The Chef John sounds amazing!

I make my own Roast Beef at home. Eat half with some au jus and sides. Thinly slice the other half for sandwiches! Happy Holidays

I'm going to make mine a BTLT. With Applewood smoked bacon, sweet mayo, Boston lettuce and beefsteak tomato. On toasted sourdough bread. Can't wait. Turkey breast is on my grocery list.
I've made this several times following Chef John's recipe closely. Delicious, easy to make, sort of a can't miss recipe. Having a meat thermometer to test the internal temperature of the turkey is very helpful.
I’ve done this Sous vide with beef roasts and Turkey breasts,. It’s cures the meat while it cooks and slices perfectly.
This is the best recipe for roast turkey I have ever tried. I'm totally sold - cooked a whole breast and it hardly lasted a day. Moist and packed with flavor. I usually have to douse turkey leftovers with salt, pepper and whatever else comes under hand. Made a cold turkey on rye with just butter. Something so simple is just simply the best!

That was increadible! I made this turkey chef John and it's so much delicious that I can't stop commenting to myself on how joyful I am.
Everything is just perfect except that maybe as for my kids I'd rather ad even a bit less of a black papper because even an amount of it alone mentioned in this recipe is enough to make this dish spicy.
Just to mention that I made it with just a raw piece of 1.5kg cut off of the whole 3kg turkey half breast, no skin, no bone.|

When I cook a turkey for the wife and kids, I will only serve up the dark meat with supper. The breast meat is reserved for sandwiches for the next few days. For me, this is turkey, thinly sliced red onions, romaine lettuce, mayo, and white sourdough bread.

I made it with a turkey fillet, no bones, did it just like this, with a termometer stuck in the thickest part, pulled it out at 63°C.... Absolutely perfect, moist and sooooo good... ❤

Once a year after Thanksgiving!!! Really? There’s only the two of us in this household and I cook at least a 20 lb bird about every 6 weeks average. And nothing gets wasted. I make bone broth running the bones through twice. So yummy.

@@ChiTownJerry : Really? Turkey is my favourite. And around here, I usually have (had since we went into lockdown a week ago) five others with us who have never declined a roast turkey dinner. Breath deep and take in the smell of roast turkey, summer savoury dressing, homemade cranberry sauce....... Now tell me you won’t pick up a turkey on your next grocery run. If you’re in the US, you can get just the breasts and I got one in Maine once that was the breasts and wings. Makes a mighty quick roast turkey dinner. We can always find the half breast portions here but full turkeys often need to be ordered from the specialty farms. Hey, you: stay safe; test negative; stay positive. Best wishes.
