- Cookbook author and James Beard award winner Andrea Nguyen returns to our kitchen for a demonstration of recipes from her new cookbook, "Vietnamese Food Any Day." Drawing on decades of experience, she discusses how to create simple and authentic Vietnamese recipes right in your own kitchen, using easy-to-find ingredients that create true, delicious, Vietnamese flavors at home.
During the talk, Andrea will demonstrate a Viet pickle recipe and prepare a Rice Noodle Salad Bowl.

Love Andrea! She's so good at explaining things so we can visualize how it's supposed to be like when she mentioned the size of the daikon vs carrot and her mentioning matchsticks vs julienne.
She seems like an amazing and open person, I will definitely check her work.
Andrea are you the one person that is saving the original from mom and pops cooking that has been lost for many of parents have long for the ethnic of old traditional recipes to comeback since nowadays most Vietnamese dishes are mix with a new fusions, my hubby's Mother recipe book disappeared after coming to America.

As far as soaking noodles, I think glass noodles, you do soak. Pho noodles, soak for about 30 minutes or so until it bends, makes cooking quicker. If you're using fresh pho noodle, then no need to soak. Bun noodles, don't soak, just toss directly into hot water and boil until done.
