A melanger is a conching machine for chocolate making. Refines (crushing with granite stones) particles to microns whereas food processor will use bladed and not as nearly as smooth as with a melanger/conching machine. Hope it helps
I find it a little strange to add water into nut butter - i thought that will make the nut butter go bad way faster then if you didn't. But if its for the purpose of making the nut butter 'lighter' then i understand the point. I don't think the oils separating are an issue when it comes to pure peanut butter - that's exactly what you get at the grocery stores if you are buying 'pure' peanut butter. Completely emulsified peanut butter like Skippies are thick like that because of the added emulsifiers on top of adding palm oil and sugar etc. Also on the side note, if you already own a robot coupe, technically you can just make nut butter in that. No hate, just sharing an opinion.
You can also use lecithin for emulsions, thats how it's done with chocolate, no water added. Although it may still work better with water. I doubt such a small amount would be a big deal but I'd probably store it in the fridge regardless. Awesome recipe, fancy schmancy nut butter lol. I've got a melanger just sitting around from my chocolate obsession and I was wondering if I could do this.
I just made it and did not freeze lol! Great tip! I usually process it in the processor until it starts to come together!

I've seem people using food processor for the all process. What are the difference? Can you do a video demonstrating the difference?
