Actually, it will run for more than 48 hours non-stop, not just 6. 🙂 It’s a necessary process to produce chocolate. Otherwise, if it’s stopped in between, the refining process will be halted and we won’t be able to achieve the smoothness needed for chocolate.

If you're doing it for personal consumption, say you'll process 500 gms cacao nibs which will produce 1000 gms chocolate liquor including the cacao butter and sugar, I'd say 8 hrs is good. At that point it makes little difference on the consistency and texture even if you processed it 24 hrs. It's already silky smooth. i have a Premier melanqer that I ordered from India and been making my own chocolate bar out of cacao nibs, and experimented a lot with flavors and combinations of ingredients.
