  • Learn how I create rustic buttercream ruffles, in just a few minutes. This is only the second video I have ever recorded, so forgive me for being an amateur! :) Your feedback is welcomed on which tutorials you would like to see next!

    Raise your cake up higher on your turntable when you get to the end put something underneath your Cake circles .That helps with your angles . Plus I find if you alternate your starting point back and forth for each row you don't get as much icing build up on that one section in the back Hope that makes sense . those hints may not work for you but I find they work beautiful for me give it a try let me know what you think. You did absolutely beautiful work .I've always said Keep it Clean and it doesn't have to be elaborate Clean and simple always best

    I’ve done that cake , I just kept going around so I didn’t have that stop/start line down the cake. Cool looking cake

    How do you deal with hot hands? My hands run warm and the icing softens when I’m holding the piping bag.

    Very cute. I was wondering how I could get the ruffles wider and not so close together. Also less straight without making it squiggly. If that makes sense. Lol like thicker at the bottom and tinner at the top. So bigger and more spaced I guess? I don't know how to word it haha.

    Beautiful! One question from a beginner...would it alter the beauty of the cake if the ruffles were placed consistently verses placing them row by row?

      Hi Enitra! This is just how I prefer to pipe the ruffles onto the cake- stopping and starting. The reason I prefer this method is because I can always ensure that the front and sides of my cake are seamless, and the only seam (although jagged), is in the very back. Every time I have tried to make one continuous "go" at the ruffle, I end up with stops and starts all over the front. :) HTH!

    What recipe do you use for your buttercream and do you chill your cakes before you do the crumb coat to prevent it from falling apart when you ice it?

      Hi Kristin! I use an American buttercream that crusts. I always keep my buttercream cakes chilled, before and after the crumb coat, and as soon as the cake has been completed. They stay chilled until pickup or delivery. Cold cake is easy to handle cake! :)

    do you use an all butter frosting? Or do you use shortening with butter frosting? When i use the shortening with butter frosting, it slides off my crumb coat. :(

    Do you think it would work better if you put a dummy cake underneath the cake board to gain easier access when putting ruffles at the bottom of the cake?

      Hi Kathleen! I've done that before, and it's still pretty awkward if I'm working with a single tiered cake. The problem I run into is hitting the drum that the cake is sitting on. :) When this cake style is made into a multi-tiered design, the only issue with accessing that bottom row, is when I hit the bottom that meets the drum. Ah well! It's a minor inconvenience. :)

      Hi Tatiana! I am in the Houston area, and this was a 6" round cake, 5" high. My buttercream cakes start at $4 per serving.

    Can one do this technique with whipping cream? I really don't like the butter sugar combination of butter cream.

      Hi there! I am not sure, honestly. I would imagine that you could use a stabilized whipped cream, as it would hold up the ruffles better. Best bet, try it out! Let me know how it works!

      Yes, a stabilized whipped cream you can use. I've done them and they work just fine.

      Angeline Ang Hi Angeline! These ruffles are best made with buttercream, not whipped cream.

      Angeline Ang if u use something like pastry pride or premium pride it will work.....flat out whipped cream has a tendency to destabilize and melt.

    When I use buttercream it becomes soft due to the heat of my hand. Any suggestions to help stop this?

      Hi! I have this exact same problem. The best thing I would suggest is to change out your bag every few minutes. It's such a pain, I know. Otherwise you could try to cool your hand by placing it on a cold glass or surface, etc. Hot hands stink! ;)

    I thought you did a nice job on the tutorial and was really helpful, I'm just not a fan of the design I guess. They don't look like ruffles to me and the back is as important as the front so you wouldn't want it to be so sloppy, but that's just me. I would want a more uniform look to mine. You did a nice job showing how to do it, just the design I don't like.

    What consistency is the frosting?

      Hi Mary! The frosting consistency can vary. You want it stiff enough to stick to your cake and not "wilt" immediately, but soft enough that you can easily pipe on the rows, and not have them fall off the cake due to icing "dryness". Hope this helps!

      I use an American Buttercream recipe for these ruffles. These can easily be done with an SMBC though.

      Hi Kay! I'm working on redoing this video to include some additional tips and the top, as well. I just place my tip in the center of the top of the cake, and start spinning the turntable, to create one continuous circle. :)

      Hi Miggy! I started out initially making these ruffle cakes with a bottom start, and working my way up the cake. It is less efficient, and the top start works much better when you start introducing ombre coloring to your frosting. It's much easier to start with a light shade and darken as you go down, than to go in reverse when working with ombre. HTH!

    It's called a ruffle cake because it has the appearance of a ruffle...so yes it is a ruffle cake..I do cakes do you? Because you seem to think you know it all insulting this
