- Many people don’t know all of the wonderful benefits of eating olives. When we think of the health benefits of olives, we probably first think of olive oil. However, olives are much more than a tasty side dish to be enjoyed as an appetizer. They pack a punch when it comes to health. There are additional benefits we can reap from these ancient fruits including heart protection to cancer prevention and allergy relief. In fact, studies have found that olives have compounds that help fight cancer, specifically of the colon and breast.
Olives are usually too bitter to be eaten raw. Therefore, they are cured to lessen this bitter flavor which is interestingly related to the fruit’s antioxidant concentration. Dry curing, lye curing, brine curing, and water curing are the most common treatment processes. However, cured olives have a high salt content, therefore, try to chose ones that are low in sodium.

Are black olives better than green?
Green olives tend to have more sodium and black olives are richer in oils, such as Vitamin E. Otherwise, the differences are low. However, I don't know how true this is, but I have read a few articles that indicate that you should be careful since the cheaper brands of black olives are sometimes green olives that have been dyed / processed to look black.

@@therefreshingpoint4106 A supermarket in my country does reduced sodium olives in brine but they are onlyvaviable in green variety. The black variety is the regular brine and so has higher sodium
