  • Italian bread, hamburger bread, dark German bread, Turkish bread, bread from Greece , bread made in Georgia and Armenia, white bread, bread with rye flour, lavash, lavash, pita bread, bread for sandwiches, bread sold and made in India and elsewhere in the Arabian peninsula and Europe, they all have have similar ingredients even though their taste is completely different.
The bakery you see in this video is in Faith, Istanbul, Turkey, a country with rich ethnicities and ways of making bread in totally distinct and innovative ways. Each region and even city, in Turkey, is famous for its own kind of bread, which can be surprising to visitors visiting Turkey.
The word güney means south in Turkish, and the masters at the bakery are from Siirt, a city in the south of Turkey. I did not specifically ask them why they named the bakery güney, but I think they did so because they are from the south-east.
There are various types of bread the guys at that bakery make: sandwich bread for döner kaban, pita for shish kabab (Adana and Urfa kebabs), bread for consumers, bread for breakfast, and to be honest with you, I think you can eat the bread sold in that bakery any time of the day.
You should definitely give the bread that is cut with the blade. It was probably the best type of bread that I ate since I was a child.
The chefs at the bakery were very welcoming, and when I asked them why, they told me that it was because they were from the south region. They were probably the most hospitable business owners I met in Istanbul. I felt like I was their family member, or they were my close friend.
The bread made at this bakery is completely free of additives or preserves, and you can happily eat whatever you want. If the bread you will be buying is cold, ask the person at register to have it heated for you in the oven for free.
I hope now you know some of the story behind this wonderful family-run bakery in centuries old Istanbul.
