Because a lot of animal and animal byproducts are subsidized on the production side, so if you're trying to keep the amount of unique ingredients you buy low, AND one version is cheaper? You're buying whats cheaper even if you lose a fair amount of customers to gut problems and allergens.

In a small pot, whisk together the water and cornstarch. Now stir in all of the remaining ingredients. Put over medium-high heat and whisk while it cooks. Cook for 3 to 5 minutes until the dipping sauce thickens. Serve hot with strips of buttered toast and a crack of pepper.
You should check out Doesn't Taste Like Chicken's dipping egg sauce. It's so simple. Just a couple of ingredients (and not so much oil) and it tastes and looks EXACTLY like yolk. No tomato in hers. And no MSG. I've been making it for years. I think she was the first. Lovely Benedict idea! I'll be making it.

what about using soft tofu? or even medium? i feel like the tofu cake to seasoning ratio is too vast? unless that dressing is seasoned to the 9s is it a good bite?
Do Just eggs actually taste close to real eggs for you, or anyone in the comments? I tried making them recently and I was absolutely disgusted by the taste. I mean truly vile. I'm not sure if I completely screwed cooking them up somehow or if they are just NOTHING like real eggs??
I'm just curious original hollandaise is vinegar butter egg yolks lemon. I just dont understand why we are adding nutritional yeast and turmeric etc. I want a vegan hollandaise that mimics the taste of the original not some weird mash up.
Cashew nuts available are not raw, they are produced by roasting. Raw cashews nuts are also available, only in season where they are grown, and are very expensive.
They all say nonsense things to justify their desire to eat animal flesh, but the one thing I admire is how they can eat that poisonous food without getting sick, sometimes when I eat something from an omnivore restaurant I get sick because of the cross contamination. So maybe they were never honestly vegan.

I think they taste pretty close to me. I made a Just Egg and Beyond breakfast sausage bagel sandwich this morning.

I have tried a lot (A LOT) of hollandaise recipes, and I don't like any of them.
Same. I find vegan recipes always add in a crap load of ingredients that you wouldn't use in an original hollandaise.
From looking at the ingrediants, I bet it doesn't taste like eggs(I hate the taste of real eggs but love the taste of vegan scrambled eggs).
Black salt does the job. It's sulfuric, just like normal eggs
