Perhaps technology will get so advanced that you will be able to hand us a sample through the screen someday! I've been doing a lot of fruit lately and can't wait to try this! I might try bananas, honeydew melon, and black raspberries as well. I bet white chocolate would be good with the berries. I really don't I have stored some of my chocolate covered freeze dried stuff in a Ziplock bag on my counter for a month with no O2 absorber or anything and it was still crispy. The key is that you must get a complete coverage of chocolate with no pin holes. This seals the inside from the atmosphere moisture.
I don't freeze dry in the molds for two reasons. First the silicone mold will inhibit the sublimation process and greatly increase the time needed to freeze dry and second and more importantly, if I freeze dried in the molds then removing the freeze dried candy would probably crumble up the squares a lot. They are very delicate once freeze dried.
@@JohnInBibs thanks for the feedback. I have only used those very molds to make my starburst candy so that is why I asked because they of course just flip right out, but I can see how it would be difficult to get the freeze dried candy that you made out of these molds without crumbling.
Sir, what will be the shelf life of these frozen fruit juices coated all-around in chocolate completely. Can these be marketed with shelf life of months or years, or these should be eaten only fresh? Kindly reply
These are freeze dried, not frozen. I have no idea on shelf life. If coated properly which would seal the fruit center than the chocolate will bloom long before anything happens to the center

I press start and walk away for everything that I freeze dry. Times are irrelevant because they vary from load to load depending on humidity, air pressure, etc. I do not track times. I run everything that I freeze dry for 40 hours. Sorry I could not be of more help
After being in the refrigerator since the 2nd of August I just tried one of the peach yoghurt ones. That is over 2 weeks. Sorry I ate and gave away all the summer fruits but I had those in the fridge for 2 weeks as well.

How does the freeze dried products not get soggy inside? Do you freeze dry the puree first then dip and refrigerate?

Why are you not removing the air from the bag? Are you putting in oxygen absorbers?
at 19:00 you see me adding an O2 and pushing air out.
Disappointed this wasn’t in the cook book.
