Spice Cake is one of my all time favorite cakes. Thank you Charlie, I am going to make this one. Saved it for when the weather cools off and I can run the oven. I've only ever had box mix spice cake, this is gonna be good.
This cake is perfect. The pineapple and sour cream is ingenious. I recently made this cake and wow! Let the sponges cool overnight, brush with a simple syrup then a thin layer of caramel and then add the cream cheese icing in between each layer - it enhances an already perfect recipe. I made the recipe exactly as directed and it was perfect. It will become a firm family favourite.

The cake was moist, and flavorful. Not too sweet either. Lovely recipe. I can't decide which cake I like best... this one, or the banana pudding cake (I had to run 🏃🏾♀🏃🏾♀ extra miles, because I was sneaking forkfuls of that cake).
